    Most do, I highly recommend it, but there are a few rebels out there that don't. :) You can boil the caps (but I think that would compromise the integrity of the seal under the cap... but it works wonders for people who choose that method), but I just soak mine in StarSan in the ol Vinator...

    And I just realized you said the packs had an expiration date of 2009... I was thinking created on date or something, haha. FYIW, the Notty recall was for Lot #1081140118V with an exp. in 2011 or something. So I don't think you had recalled yeast... just old yeast :)

    Definitely give it another 24 hours from time you pitched the second pack... maybe 48 hours if you have patience :) So there is absolutely zero activity in the airlock?

    Give the bucket a couple shakes... wait 24 more hours. If still nothing... buy a fresh pack of yeast. Side note, what was your OG? Edit: When did you pitch the 2nd pack of yeast?

    My LHBS has there Notty sitting out on the counter. I just bought a pack a couple weeks ago and it worked fine for me. I'm not sure if they put the whole box of yeast in the fridge and pull it out for the day or what... but it looked like they just leave it out all the time by the register :|

    Take your reading before adding yeast. If you take it after adding yeast, there's the possibility that you'll drain some of the yeast... but what's a couple yeasties, there's like 18 million billion gazillion more floating around ;)... or... something like that.

    Easy, stop eating fast food... it's crap (yes, yes, very tasty too) :) One of my favorite quotes from Michael Pollan, "Eat all the junk food you want as long as you cook it yourself.” Good rule to live by.

    Yep. But it's not that it makes no difference... just that it seems pretty negligible. It's a bit long, 50-60 minutes I think, but they talk about partial boils, full boils, late extract addition... all that jazz and hop utilization or something. Worth a listen and it seems to go against a lot...
