A little help with a Cranberry Cream Stout

Right, I don't want crazy cranberry flavor. I read in another thread a recommendation of 1/2 to 1 pound of cranberries per gallon of beer. I figure trying 1/2 lb pureed and boiled, cooled and into secondary. Anybody think this is a mistake?

A little help with a Cranberry Cream Stout

I've got a cream stout ready to rack to secondary. It's a recipe I've done before and really like. I'm tossing around the idea of adding cranberries but haven't done anything with fruit yet. Is now the time to do it? I'm just looking for a little holiday flavor. Any help would be great.

    Cranberry beer?

I'm thinking of trying something similar with cranberries and a cream stout I've already got in primary. Do fresh cranberries need to be boiled before adding to secondary? And quantity? From what I've seen so far I'm thinking of 2 1/2 lbs for a 5 gallon batch? Any thoughts?

What is the best temperature for storage?

I just converted a 23 cu. ft. chest freezer for storage in my shed. I installed an electronic temperature control that will run the compressor in the summer and the electric defrost heaters in the winter. Year round I am covered. Now I just need some advice on what temps to run. Beers I am...

Advice for variation on Dogfish Head Indian Brown Ale

Thanks, searching around I've found people using anywhere between one and four beans. How should I determine quantity? Right now I'm thinking two beans cut lengthwise and soaked in vodka for a couple weeks (I've got the time if it's not going into the fermenter) and added to my secondary?

Advice for variation on Dogfish Head Indian Brown Ale

I followed Sam Calagiones recipe in Extreme Brewing and it came out great. I do want to experiment by adding a subtle vanilla flavor. I'm looking for advice on how and when to add extract or beans. I've done some searching on the topic and found folks soaking the beans in Vodka. How long...

Can I get a little advice on my brew plan?

Thanks, I racked to the secondary so I could start the next batch. The first batch wasn't ready to bottle at that point. Is it better to have more time in the bottle?

Can I get a little advice on my brew plan?

Alright, I'm in the process of brewing my first two batches of beer. My goal is to have two different beers ready for my vacation at the end of February. I brewed my first batch (Amber ale) from an extract kit I bought from my local shop on 1/11. I racked it to a glass carboy after 11 days so...

Yes, thanks Revvy, sorry, I am not at all used to this kind of responsiveness in a forum. It's awesome! Thanks for the help everyone. I promise to search more and ask less too!

First batch, forgot to take first hydrometer reading...

Thanks, the plan was to bottle after 12-14 days so I could start another batch in the fermenter and have two beers ready for bike week in Daytona in five weeks. Doable? I'm not going to risk ruining the beer or anything. Also, I heard waiting more than 14 days could result in off flavors from...

    1 bubble every 10 seconds . . .

The instructions for my brew kit said that leaving the primary longer than 14 days can result in off flavors from the yeast? Is that true?

First batch, forgot to take first hydrometer reading...

So far so good with my first batch. I pitched yeast last Monday and fermentation started next day and is slowing down now. I was reading up on preparation for bottling and realized I was supposed to take a hydrometer reading when I pitched the yeast. Would it be beneficial to test now? And...

    Newbie first batch HELP!

Hello, I am in the process of botching my first batch of beer. I started the process about an hour ago and was doing fine until I noticed that I couldn't find the ale yeast packet in my ingredient kit. I've looked everywhere and I can't imagine a supplier open this late on a Sunday night. At...
