    wanting to make a Red IPA

    Jamil has a recipe in the American Amber section of his "Brewing Classic Styles" book called "West Coast Blaster" that is very close to Red Rocket. I don't have the recipe handy but I'd recommend purchasing the book anyway since it's full of great recipes that are extract as well as all-grain.

    It's an individual preference, but I don't think that I have drowned mine by dry hopping, the malt aroma stands up well and then... A big red can take time to mature, hop aromas usually fade away anyway. The last one I brewed is 4 months old and is just where I like it now, very balanced.

    Given that you would probably be ok with 2, or split the difference and use 1.5. BTW, The French oak cubes I used were "Medium toast" - the range is varied.

    Manifold

    I am just finishing up building up a copper manifold, I did use Palmer's book as a reference. I went with 1/2" tubing and fittings and used a hack saw to cut the slots. I have a friend with a similar set up and it works great for continuous sparging or batch. Hope to try mine next weekend.

    Milling: Drill or Hand Crank?

    In the process of going all-grain, looking at buying a mill and was wondering if folks have a preference for using a drill or crushing it the old fashioned way with a crank. I kind of like the idea of hand cranking, but then I haven't had the experience of milling 14 pounds of two-row.
