20 lb of sugar and a jar of yeast nutrient

So there seem to be some veteran candy makers on this thread that can help me out here. If my sugar "syrups" are crystalizing as soon as they cool (in essence I'm getting more of a paste that hardens very quickly), is my second terminal temp getting above soft ball (post water addition), or...

    Too much candy sugar?

So if I consistantly miss my target OG (on the low side) using 100% efficiency, do you have some advice on what I might be doing wrong?

    Too much candy sugar?

I'm still not totally clear on all the sugar, I was under the impression that the cooking process caused some sort of chemical breakdown resulting in a simpler form.

    Too much candy sugar?

Yeah, it's 5 gallons. My planned OG was 1.065 assuming .75 efficiency for the DME (45 points) .7 for the LME (37 points) and .65 efficiency for the sugar (36 points). The temp has been low 70's according to my brewmometer sticker, so probably somewhere in the mid 70's range? I've been...

    Sweet. Literally.

    Too much candy sugar?

I wonder about cidery notes, but I thought that was more a problem with uncooked sugar being too much of the grain bill.

Yeah I'm kind of thinking along the lines of next christmas I might have something.

    Too much candy sugar?

So I figured I'd try to add some sugar to my extract beer, and used this process to make some candy syrup. https://www.homebrewtalk.com/f12/20-lb-sugar-jar-yeast-nutrient-114837/ Well, like any excited kid in the candy syrup store, I went overboard, and didn't do enough homework on what...

    Astringent taste.

Update: My latest two batches were steeped at temps between 150-155F, temped with a calibrated thermometer, basically I followed as much of the advice I received on this thread and (after 4 weeks bottle condition on the first batch, and 2 weeks BC on the second) am happy to report that the...

    Astringent taste.

Been reading a bunch about the importance of this step today. I order kits from Northern Brewer, and had assumed they were pre-crushed (I believe they used to offer this option). At any rate, I hadn't crushed any of the grains from these kits. Soooo... Addendum to my list is thouroughly...

    Astringent taste.

I can't thank you guys enough for the advice, much appreciated. I generally bob the grain bag once or twice and then let it drain back into the wort as I remove the bag. I'll nix this practice. The first two batches contained the flavor throughout the lifetime of the beers, but it did...

Thanks for the quick responses. I should have mentioned that I'm using bottled distilled water. -DB

    Astringent taste.

So I've brewed three batches now. They have all had an astringent flavor in the finished product (at the back end of a swig). All were extract kits with a combination of DME and LME The first two batches were 5 gallon boils The last batch was a partial boil (3 gal), then dilluted In the...
