    Agreed .. you harvested them too early. There should be a lot of threads/videos on how to tell when your hops are ready.

    Salal Wine

    I can't say I liked it. It was thick, too many berries maybe. I don't even know how to describe the taste - but it was hard getting it out of your mouth. Nobody I had taste it liked it. I wouldn't let that stop you if you want to try it - apparently some people like it. I did not.

    IMHO hefeweizen are not an aging beer. They are best young. Your grain bill looks ok although I've never tried Weyerman Abbey malt. I usually use a Munich malt. Your hopping is a bit high but not problem there. The 3068 yeast is the best yeast IMHO. You didn't mention your fermentation temp...

    Maybe. Doubtful. The only thing you can do is push forward and see what happens. Chances are that you will be all right but something bad could happen, so just be aware of it.
