    Old malt...to try it or not...

    Well Ive been on a brewing hiatus for the last year. I sit here today with plenty enough year old crushed malt and slightly out of date yeast and some time. What do you think? Is it worth my time?

    Slyfox Phoenix

    Just recently got to try this for the first time. Just wanted to give props to this fine brew. It definately went to very near the top of my favorite (commercial) brew list. Nice to get good beer in a portable friendly can too!

    DH: Floating...will i get anything?

    Well, this is my first time dryhopping, and i guess i underestimated the bouyancy of hops. They are in cheesecloth to aid in removal, with weight added, but apparently not enough. Will I get any aroma at all? Or will they possibly sink after some time has passed? Thanks

    Strange smell in fermenter?

    Raising ferment temp to get dry finish...

    I have a "fizzy yellow beer" in primary right now, that i would like to finish dry and crisp. I understand that you can raise the ferment temp toward the end of primary to help the yeasties finish strong.     3 Gallon Carboy for 2.5 gal batch?

    Maybe just ovethinking this one, but ive been thinking about doing smaller batches to try out beer styles ive never had, and experiment in general. Will brewing a 2.5 gal batch (5 gal recipe halved) in a 3 gal carboy be okay? My question is about the excess headspace. Thanks
