    Yes I noticed the same when I used this yeast. I did my own testing with the same recipe with different kinds of yeast. s-04 tasted beer like to me.

    +1 on that yeast can give it a sulfury smell. I use White Labs cider yeast on ocassion and white labs even lets you know that their will be a sulfury smell but that it will disipate within 2-3 weeks. Mcduff

    Question: Adding flavours to cider?

    These sound like great ideas. I would however not add any cordials to the cider while it is fermenting as that would also add alcohol which will hasten the yeasts death. Unless you want that of course. Let us know how this works for you. Cheers, Mcduff

    Making Apple Juice less fermentable

    boiling the juice is a bad idea. (or so I have heard). Some people say it gives the cider a cooked juice taste, also it will set the pectins and make it difficult to clear.

    Apple-Pear Cider

    I use WL cider yeast all the time. I cold crash and place it back into the carboy and let it sit out at room temp for at least two to three weeks and the sulphur smell will disipate. Wyeast cider yeast is pretty good as well. I have never noticed a sulpher smell for that one.

    I have done this and not noticed any off flavours, but yeast washing may be better. I plan on trying yeast washing on my next batch but the threads say you should only go about 4 generations and then you should buy new yeast. Mcduff
