    Restatement Eight

Awesome! I'm really stoked to hear how it turns out for you! Like I said, it is always a crowd pleaser. But watch out, you might put on a few pounds because of how rich it is... :)

    Raising ABV 1% with honey?

I made a pretty serious honey ale, 3 pds of honey post boil. Threw a Halloween party - there were definitely people complaining about hangovers, but that just could have been the massive amounts consumed!

    Angled Kegs?

Thanks for the input guys. I'm going to go put on the stupid hat now.

    Angled Kegs?

Hey All, My brother, seeing the awesomeness that is my keezer, decided that he wants one as well. But he doesn't want it to be as tall. His question is whether or not you can angle kegs. Nothing dramatic, just at 70 degrees, instead of the full 90. Would you end up not being able to...

"Real Ale" in a Wine Bottle?

Thanks for the responses. A couple of thoughts/questions: As the wiki says, casks these days are steel. So, I presume that the naming distinction regarding "cask" ales likely doesn't rest on subtle overtones obtained from oak wood, but is perhaps a result of the quantity of beer being...

"Real Ale" in a Wine Bottle?

I was feeling a little frisky the last time I was brewing, and decided to depart from my normal routine. After primary, I decided to fill up a wine bottle (and then cork it!) with my beer, with the uneducated intention of making "cask ale", or "real ale". So... 3 months have gone by, and...

    Restatement Eight

I do, but it probably won't help you. I keep my beer in an apartment that oscillates from 62-72 degrees, depending on the time of day. I just brewed this beer for the third time. It never fails to disappoint. If you brew it, let me know how it turns out.

    Imperial Peach Wheat

This is pretty epic for your 3rd beer. I'm still humming away making Amber Ales....

    Palmer's Lady Liberty Ale?

Perhaps the better question is - what do you have to lose? That's (IMHO) the beauty of homebrewing. Will it be slightly more alcoholic? I imagine so. But who cares? Unless you have some vested interest in making it exactly like the book, I'd say just throw the whole thing in, and call it a...

    Sediment With Kegging

Good Morning All, I find myself in a conundrum. I did the whole filtering thing when I transferred the wort into the fermentor, and I got a significant amount of the sediment/hops out. After letting the fermenting beer hang out for about two weeks, I syphoned the beer into my keg and...

    Is Nottingham yeast this slow?

Update - I came home from a week and a half long trip, and the brew had gone from 1.080 to 1.020. Yay! Apparently it did it's thing after I was gone (which was 50+ hours after I pitched it) Now that I've done my happy dance, am I going to get weird flavoring from it being in the fermentor...

    Is Nottingham yeast this slow?

It's now 44 hours. Popped open the bucket, and there's absolutely nada going on. Tomorrow I leave town for a week. Hmmm....

    Is Nottingham yeast this slow?

Started on Monday night at 2200. As of this (Wednesday) morning at 0700... nothing. Wish I had read this thread last week when I was picking my yeast.....

    Keezer inquiry

Sorry for not being clear. I'm assuming that the extra clearance granted by the collar allows you to put some kegs on the hump. My question is how many can you fit if you didn't have a collar (so, how many on the base floor of the freezer, not on the hump).
