    Scaldis or Bush Noel Recipe

I am going to attempt the Scaldis Noel Belgian Strong Ale and would like some feedback on a few items. 1. I read in another thread that these beers should start out in the 68* fermentation range. I am using Wyeast 1388 and the temp range is between 64* and 80*. I am wondering what my...

    Mash Water Volume Q?

Using beer smith it tells me to use 10Q of water for my strike water. I brought 2.5 gal (10Q) to 170 and added to my 8# of grains. 3# Flaked Barley 3# Pilsner 1# American Wheat 1# Flaked Oats Problem is that my mash is the consistancy of oatmeal - obviously! Do I add more water at...

    DFH Score!

Buddy of mine bought a full keg of DF90...he tried to kill this thing over several months of drinking on it.. Anyhow, he decided to give me the keg in exchange for the deposit... SCORE - I plan to bottle the beer and keep the keg as a kettle!

    Whiskey Barrel Aged Beers

First - my apologies for not searching this topic before posting - not sure if it is my "free" level that does not allow for advance searching or if I am missing a plugin. Anyhow - I was hoping that some of the seasoned brewers could point me in the right direction for instructions on how to...

    Possible Stalled Fermentation

I am brewing the wonderful greatness of the Southern Star Bombshell Blonde Ale (Texas Local Beer). Brewed this as a partial mash - checked OG in at 1.053 (Perfect - Spot On!) Color was perfect etc... Anyhow - it has been in the primary for two weeks, airlock has ceased completely and the foam...

    New AG System Builder

So, I have a good friend of an even better friend who specializes in custom build equipment (Stainless Steel Equipment) for the restaurant industry. This guy makes all kinds of equipment from mixing hundreds of gallons of mash potatoes to pumping thousands of gallons of liquid... more...

    Under Boiled!

So I knew this would happen - my propane tank ran out before the boil completed. The boil only lasted for 30-35 min. When I realized the boil had stopped - I threw in my last hop addition (5 min) and threw the wort chiller in. Cooled it all down. I am making a Blonde Ale so I cannot...

    Noob Confidence

I just wanted to brag about my recent brews - I have only been back into brewing for about 4 months... Beer 1 - Pumpkin Ale - Good drinkable beer with a VERY close resemblance to the DFH Punkin for which my recipe was cloned from. The only two things I will do different on this one - add...

    Cleaning and Sanitizing General Questions

Ok...so we all know that cleaning and sanitizing is VERY crucial to making good beer. My questions relate more to the overall process and handling of all equipment to be sanitized pre and post. When I am brewing up a batch - I typically get started on the boil and about 1/2 way through the...

    Fermentation Not Complete?

So I took a gravity reading today on my oatmeal stout - should be around the 1.014 range for a final OG. Does this look right? It's been fermenting in the primary now for 5 days. I forgot to take an OG reading too...

    No Chill Method

I have been brewing again for a few months now so...I am essentially in the brew equipment procurement stages. I have just about everything to effectively brew extract and partial mashes - except for a wort chiller (which I am going to buy today!)... I have read through some of the past...

    Brew Calander

Does anyone know of a calendar for all of the various seasonal / styles? For example - brew xx/xx/xx to have an Octoberfest or Pumpkin Ale ready by xx/xx/xx. I seem to be late to the dance all of the time. I would like to start planning a more regular brew schedule. Since it it too late...

    Possible Mistake?

You know how you are just driving along and replaying your previous nights brew in your head? Well...this morning I am driving and I realize that I brewed my pliny clone with roughly 13oz of pellet hops directly into the boil (no bag)... I did not filter out the hops when transferring from...

    Oatmeal Stout Questions

I am brewing a recipe that I found on this site and have some questions on the process - I have never brewed with oatmeal in the past. My recipe calls for 1.25# flaked oatmeal. I plan to do a partial mash and wonder if the oatmeal goes directly into the mash or do I steep this at a later...

    Last Hop Addition Question

This recipe calls for my final hop addition at 00. http://brushvalleybrewer.blogspot.com/2009/01/great-homebrew-recipes-pliny-elder.html So I add this at flame out - how long do I leave the hop bag in the boil? Or should I just add raw pellets and not bag them?

    Dry Hopping Questions

I will be brewing my first DIPA tonight and the recipe calls for dry-hopping. I will be using almost a full # of various hops. Recipe: http://brushvalleybrewer.blogspot.com/2009/01/great-homebrew-recipes-pliny-elder.html My question is the recipe does not specify when to dry-hop. Should...

    Kegged but no C02?

I just racked my beer from the secondary (after two weeks) into the keg but did not purge it with C02. It is sitting in my fridge to get down to the recommended carbonation temperatures before I force carb. Is the beer ok sitting in these temperatures with no CO2 on top?

    Pliny

So I bought all of my hops / grains / extracts to brew this wonderful beer but want to run a few processes by the experts to ensure that I do not eff this up - this one was expensive <60 - obviously mostly from the 1LB of hops...
