    so... i have to continue to take readings now before bottling? it's been 2 weeks. and my kit didn't really come with instructions, guess i have to read some books about this bottling process, i have to add sugar? (sugar would seem to improve the taste)

    it wasn't pitch black during fermentation but was in a closet. cool. the temperature here doesn't jump that much, it gets cool over night, but in the closet without the direct light it's going to stay the same. not too hot not too cold...

    Crap. I screwed up. on Twitpic Temperature 64 degrees F. ... i thought i didn't have enough liquid in the tube, so i added more. so the meter is sitting higher. same results... sorry the pic is blurry, from my phone.

    also weighed water it was 1.0 ... a little under 1.0 actually. i guestimated temperature, going to assume that's where it was off...but i'm assuming the hydrometer is accurate

    How hard is it to contaminate?

    oh. I used PBW to clean my stuff first. Then Star San. I didn't realize PBW was for tough scrubs... the kit I got didn't say that. Now I want my starter packet of PBW back... Even the book I got didn't go into much detail. Thanks guys. REALLY helpful. I know I'm not brewing in a clean room =)...

    How hard is it to contaminate?

    So being really paranoid...how hard is it really to contaminate your beer? When's the highest risk? What part of the process? I always boiled water that I used to clean with or added PBW. Cleaned out bucket/carboy with Star San... But let's say what happens if you clean with just tap...

    White Labs is horrible!!!... maybe.

    I pitched same yeast (or similar? - WLP300) at same temperature or even a little warmer a few nights ago. It took 15 hours before I started seeing activity. It has been VERY active after about 24, 25 hours...foam out the airlock and such. Plug popped out plastic carboy a few hours after that...

    cool thanks. and for unanswered specifics. plastic airlock, one big piece, the cover, and the cap. i know how i could get a smaller hose on the main piece for a blow off in the future. i am using bavarian wheat malt extract (dry) and white labs liquid yeast for hefe weisen. ..sterling hops...

    P.S. Fermentation into 36 hours right now and I can say with each time there's foam into the airlock there's less. It's not "exploding" the plug off anymore and only did once. Less foam in the airlock too with each "reset".
