    Dude, I am totally not down with that! As an American Wheat, I'm sure it's great, but hefes need banana! Iso-amyl acetate is the reason I like hefes! But, if you're really trying to avoid it, I guess Nottingham is a lot better for giving some good yeastiness than Chico.

    Agreed. Nice and easy. A basic recipe, assuming 5 gal: 6# Wheat DME 1 oz Saaz (60 min) No other hops additions, 'cause the yeast needs to take center stage, and the hops will fight it. I'm not against making it a dunkel, by any means.

    Do it. It will be pretty dry, and you need to keep fermentation temps pretty low (fusels are more likely with the apple juice). To keep temps low, I just submerge my fermenter in water, swapping out jugs of frozen water, as they thaw, to keep it nice and cool. I would advise against a hefe...

    That sounds like a great recipe. Normally, I frown on a clean yeast profile in a wheat beer, but a lot of banana, clove, and bubblegum wouldn't do much for all the spices you threw in. I would be very interested in the result. EDIT: I forgot to mention that if the lemongrass works for you...

    I would add the peppers at the end of the boil. The fire-y capsaicin will survive the boil, but the subtle fruit that really distinguishes the habanero's flavor from that of its chile brethren is more delicate. +1 on the honey, though. Which you would also need to add at the end of the boil.

    Okay, admittedly, I didn't think out some of this. The whole oz of Amarillo should go in the main pot, since it happens at the same time. How did I do that the first time? The multiple hops additions happen when they do because I opened sanitized 1 oz packets of hops at that time...
