    Ok so what would be the best way to keep the temp in that range? I live in the desert so it's 90+ degrees outside daily and where my carboy sits, it's fluctuates from 72-78 degrees?

    Well tried it several times, and after bottling and bottle conditioning it for about 2 months, it still has an extremely strong bitter, almost "Burnt" taste to it...like char...what the hell?

    Is it ready to bottle?

    The longer the better is usually the case. But if you're eager (which is MOST understandable) then in your FG doesn't change in 3 days or more, it should be done. Enjoy!

    Exploding bottle???

    Maybe not done for....but that bottle was for sure overcarbonated...the pressure from the CO2 was just too much for the bottle to handle...what kind of bottles are you using and how did you prime them? Also, was that the only bottle to break, and in how long?

    +1 i agree....tempurature, more importantly tempurature CHANGES are more important since the airlock is in place. If you have a good steady room temp you sould be peachy!

    Steeping Specialty grains

    Don't bring to a boil nessesarily....put the grains in your steeping bag, get water to about 155 F and lower the heat just to keep it at that temp, put in your grain bag, swirl it a bit to make sure they're all soaked and wait 30 mins, and remove them!

    Yeah i plan on conditioning it in the carboy for a while, i'm just wondering when to rack it to my secondary so my dry hops don't ruin my red. I Plan on maybe giving it 2 months or so to refine.....just don't want another geiser in my secondary
