    7 Months in the Fermenter

I brewed a porter back in the summer...like 7 months ago. It was in the fermentation bucket in my basement for a few months, and now it's been sitting in a cool, dark corner of my new apartment for the last few months. Bottling is a timely venture, and I want to save this batch if possible but...

Still Not Carbed after 1 month + ?!

I bottled an IPA over a month ago. I had the bottles in my basement for the first 2 weeks, around 68 degrees. Not much carbonation, but still pretty green. So I moved them upstairs to a closet at over 70 degrees. They've been there for about 3 weeks now. I had one last night and still very low...

    Molasses in a Porter

I'm going to brew a porter tonite and was thinking about adding some molasses. Charlie Papazian suggests you can use it as a primer (1 cup per 5 gal, I believe). Is it better to use it instead of priming sugar, or should I add it to the boil? At 60 min? 15 min? Will boiling it significantly...

Outrage over Flying Fish Brewery's "Exit Series"

MADD is apparently outraged over Flying Fish Brewery's "Exit Series" beers, which are designed to celebrate the great Garden State of New Jersey by naming a beer after each one of the infamous NJ Turnpike's exits. Here's the AP article: The Associated Press: NJ brewery draws ire for naming...

    Harvesting brett?

I have a bottle of Ommegang Biere de Mars, & I was thinking about harvesting the yeast from it (Brett). I really dig Victory's Wild Devil Ale, and was thinking about possibly funking up an IPA. From my research, it seems like I would pitch the brett during secondary. I also read about lots...

    Vanilla/bourbon porter...hops question

I am interested in brewing a porter with vanilla bean and bourbon added either after a week or so in primary, or in secondary. I got a recipe from the LHBS for a "Colonial Porter". My question is, do you guys think I should substitute the Cascade hops with something with less "citrusy" notes? I...

Just wanted to share my happiness

I bottled my first brew back at the end of May. I definitely made some n00b mistakes...forgot to sanitize the stirring spoon once or twice, couldn't quite acheive a rolling boil, had a little trouble with the siphon. I bottled only after having it in primary for a little over a week. I was...

    LME weight conversion??

Anyone have any idea what a quart of LME would translate into lbs? I'm starting my 2nd batch which is a 2.5 gallon recipe (cut in half from a 5 gallon recipe). I am using BeerSmith to try and calculate when during the boil I should add the LME (I've been told part of it at the beginning, and...

Couple more questions about 2.5 gal batch

I'm a new brewer, starting my 2nd batch..a dark wheat beer using some smoked malts. It will be a 2.5 gallon batch (due to my slow-a$$ boiling electric stove). My recipe is scaled down for exactly half of a 5 gallon batch. I've done a lot of searching on this topic, but I still have a couple...

    Partial boil??

Hey everyone, I’m a brand-n00b, just bottled my 1st batch. My problem is I have a glass-top electric stove that takes forever to bring my 3-gallons of water in my 5-gallon pot to a boil, and it didn’t produce the desired rolling boil during brewing. I felt like I was brewing all day...

    Hello from dirty jerz!

Howdy from NJ! I've been big into craft beer for a while now, but I just brewed my first batch ever on Saturday with a nice setup I got from Midwest supplies and a recipe I got from a local shop...an IPA with Chinook & Fuggles hops. It's currently fermenting in my basement...keeping my fingers...
