    Chili porter, help requested

So I had a request for a chili porter and I'm looking for some help. My target is to have the flavor be primarily porter, with a hint of chili. I'd like it to be where if they aren't told that it's a chili beer, at least some people won't immediately place it, but when they are told, it will...

    Oozlefinch beer

I'm going to be making a recipe based around the Oozlefinch. I'm looking at probably an amber ale 3.5-4% ABV, IBU pretty moderate. First pass: http://www.brewersfriend.com/homebrew/recipe/view/121088/oozlefinch-mark-1-

Help me decide on black IPA hops

I'm going to be making a black IPA (all extract, darkened with maltoferm) but I need help deciding on what hops to use. So, what are your favorite IPA hops? What flavors come through with those hops?

    guess who's now brewing professionally?

Just got hired to run a small 4 bbl system. It's one of the micro pub electric extract setups, but still, my beer is going to be sold!

First infected batch (and it's a doozy...)

Well, ran out of propane part way through the boil. I figured "well, might have to do something to bitter it when I keg" Well, alpha acid conversion was the least of my worries. Something managed to survive the boil and soured it all. The worst part, it was my first 25 gallon bulk batch...

    no airlock activity

OK, so made a batch and transferred onto yeast cake a bit early (80-90° wort). No activity after 48 hours. Pitched some Nottingham on the assumption the yeast were over stressed. Nothing. Pitched aglob of cake from a batch I was transferring to secondary. Nothing. This thing should be going like...

    Single vessel kettle/fermenter?

I've got this monstrous hot water tank which I was planning on turning into a kettle. I've got a crazy idea though: kettle fermenter. Boil and hop, then let cool and pitch right into it. Seal it up and let it go. Any reason this won't work? The break material would still be in there, but...

    Immersion cooler

Made my own after seeing a fridge water line kit with 25 feet of copper tubing for 40% off. The only really difficult part was finding a way to connect 1/4 tubing to the faucet. Got some screw clamps which I didn't end up using after realizing that the tubes would slide on nice and snug. got...

3 gal corney for two 5 gal cornys (Massachusetts)

Ball lock for ball lock. Got it figuring I'd use it as a more portable keg, but i have just ended up hauling the 5 gal around anyway. I'm in north central mass.

    first year hops growth

so with the packet I got I was told to expect 8 feet first year. Looped a rope over a branch 20 feet up or so. It hit that and is now looking to branch off lower. Strong plant!

first gluten free is VERY cloudy

ok, simple recipe: 5 Lb sorghum syrup 3 lb flaked corn 1 oz hops (Saaz) yeast been about 3 weeks in the primary and it's completely opaque. Any ideas what it's coming from and if it will clear?

    The RDWHAH experiment

While brewing today, I got to thinking, what if every RDWHAH mistake was done on the same batch? So, in the interest of science (and beer), I propose the RDWHAH experiment. I will be intentionally make as many 'mistakes' brewing as possible, to include: No sanitization of ANY brewing equipment...

    kegerator conversion: CO2 placement?

Ok, so converting a minifridge into a kegerator and have enough room for my 5 gal and 3 gal, but no place to put the co2 tank. Is there any reason not to keep the CO2 outside the fridge other than keeping from drilling another hole?

    Am I out of luck?

Bought some cider to ferment but didn't check for preservatives. Well, it's fermenting slowly but has a buttery smell and taste. Will time clean this up as with beer fermented too hot, or am I out of luck?

    Differences in juices

Ok, so my first experiment with cider was simple and awesome. My brother picked up some cheap cider from building 19 called martinellis gold medal cider. All I did was toss some yeast in and let it run for about 2-3 days, chilled it and drank. It came out slightly yeasty probably due to little...

    water tank -> brew kettle

So my brother picked up this thing for me that I'm thinking would make a pretty decent kettle after I cut the top off it. The thermometer port is a bit high, but the tubes inside could actually make a decent chiller. I'm thinking if I toss in a false bottom I could use the drain at the bottom to...

    Crazy idea: constant flow brewing

OK, in bio labs, there is a technique for holding bacteria at exponential growth where you basically have a constant flow of a nutrient solution into a population while removing an equal volume out the other end. I'm wondering if something like that could be made for brewing. I'm thinking of...

trouble holding temp down with first dopple

Ok, so I'm brewing a doppelbock using an octoberfest yeast and due to poor planning and warmer temperatures all of a sudden I can't seem to hold the temp much under 70. It's about a day and a half into the primary and the temp seems to be holding steady. Any tips on fighting off flavors? I'm...

    flip tops and flat beers

ok, so popped open a flip top of wheat beer that I was using for longer aging and was greeted with not carbs. Looking around the internets I've seen that other's have had this problem as well. Question, if I store the bottles upsidedown or on their side, will it help ensure a good enough seal...
