    How do you ensure a keg is sealed?

    I'm not really sure how you would go about getting a good seal if you're naturally carbonating in a keg. I force carb after kegging and will hit the keg with about 30psi to get the lid to seal tight. It also helps the poppits to seal as well. I'd probably try putting keg lube on the lid gasket...

    Whole Hops

    Crash cooling your beer for 2 or 3 days down to around 32-35 degrees will do wonders to settle the hops to the bottom of the fermenter, making it relatively easy to siphon from above the hops.

    I mashed at the recommended 145 (or so, from memory) degree mash temp and then fly sparged with approximately 180 degree water in an effort to raise the grain bed temp. I don't remember the numbers exactly but I think it worked well. The beer finished 4th in the BOS round of a local competition.

    Brewed the Union Jack per the CYBI recipe and it was definitely a great beer. We entered it in our first beer competition and placed 4th in the best of show round. I can't wait to brew up another batch and get it on tap again.

    Hooked on double brew days

    Double brew days are definitely the way to go. My wife and I will each pick and brew a beer, taking turns at cleaning and sanitizing. We do the double brew days throughout the winter and then just do singles after work during the summer.
