Pressure canning wort – the science behind processing times?

I’m trying to figure out where the processing time and psi for canning wort comes from? The guidance on the internet is 15 or 20 min at 15 psi. Who came up with these numbers or what calculations did they use to figure it out? There must be some way how to determine if the guidance is safe or...

    Stout on Beergas foam problems

I have a problem with a dry stout on nitro. I get a full glass of foam. I was pretty sure I did this all right so maybe someone can point out what is wrong. Ok, here’s the run-down. Carbed the stout to around 1 vol co2, it’s been sitting in the fridge for 1 week around 7°C. 10 foot 3/16 lines...

Stovetop Boiling - how many BTU?

I'm in the market for a new NG range and would like to be able to brew on it. I know that some of you boil 6 or 6.5 gallons on your range with no problem, and i'm wondering how many BTU's it takes? The 2 ranges that i'm looking (GE profile slide in range) at have power burners at 15000 btu...

Brewpot, regular bottom VS tri-clad bottom

I gave a 7.5 gallon SS brewpot with a thick tri-clad bottom that I use on a NG stove. I never really get a good boil. It’s about the same if I boil 4 gallons or 6, so I’m wondering if I loose some heat through the thick bottom. Do you folks think I would get a better boil by using a pot without...

AWS 35 lb Digital Scale hold feature. I want to turn it off!

I picked up an AWS 35 lb Digital Scale, from Northern brewer. It’s accurate, but it has this hold feature that I don’t like. If anyone has this scale, is there a way to turn it off? It makes weighing out grain difficult. For example I’ll start pouring grain into a container on the scale, the...

    Oxyclean (other brands)

I've been using PBW and love the stuff. Unfortunately I have to mail order for it and it can be pretty pricey with shipping/brokerage. I see a lot of people use Oxyclen instead of PBW but I can't find the Oxy-free stuff anywhere. I found a container of Nature Clean oxy stain remover (no perfume...

    United Canadian Malting info??

I stopped by the LHBS today to pick up some ingredients for a pale ale, they don’t have much of a selection which is usually why I’ll try to buy online. I grabbed some crystal malt and Munich and asked the guy what was the lovibond for the crystal and Munich. He had no idea, made a few phone...

    First pint is not carbonated

I recently picked up 10 feet of 3/16 beer line, now I don’t have to purge / mess with the regulator every time I want a drink. I find that when I pour the first pint, it’s rather flat and every pint after that is great. I assume the beer in the line looses the carbonation (say I didn’t pour a...

    Wimpy Boil

So I get a small boil, more of a churning then a rolling boil on my gas stovetop when doing 5.5 gal batches. So I have a couple questions about wimpy boils. I’ve been keeping the lid on the kettle for the 45min-1 hour it takes to get to boiling point then removing the lid as soon as it...

Beer Line - Have to drop pressure to serve

I think I need a little help figuring out how much beer line I need. I tried to follow the calculator... but I get a 3/4 glass of foam. I force carb by letting the beer sit for 2 weeks at 12 psi/5c. (For 2.4 volumes of CO2) There’s 5 feet of 3/16" tubing attached to the keg and it's served...

New kegerator question - Will it fit 3 corny's?

I'm looking to get a new mini fridge Danby Silhouette® 5.8 cu. ft. All-Fridge (Black/Stainless Steel) to convert. I was just wondering if anyone ever used one? and if it can hold 3 corny's?

Canucks!, I need help finding a fridge.

Ok, I live in Ottawa and cannot find a Sanyo fridge anywhere around here. Best Buy in Canada does not sell appliances and everything at sears seems to have a freezer in it. I live in an apartment and I’d like to find something that looks good (Black or SS door, glass door etc) because it will...

    Empty O2 bottle

This weekend I brewed an ESB, and when I pulled out the O2 tank and stone, it was empty. :( I've only used it for 2 brews before this, and only aerated for 5-10 seconds for each one. I guess the regulator must have leaked? Do you guys remove the regulator when storing it away for the next...

Finally brewed a really good beer

So I’ve been lurking around HBT for a few years, brewed a few extract kits with steeped grain and last year got all the gear I needed to go all grain. In total I probably did about 15 batches - 8-9 all grain. The results were good but not quite what I expected. I wanted to make beer just as good...

    Gelatin Finings

Has anyone used them? I picked up a brewing equipment kit and it included a jar of powdered Gallatin for fining. I guess I wondering how to use it... the directions say (To clear wine and beer. Use 1/2 tsp. per gallon for beer and 1 tsp per gallon for wine. 1. Add gelatine fining material to...

    Interrupted while brewing

So, halfway through the sparge on an oatmeal stout, I get a call and I have to take off for an hour to 90 min. I did a mashout and plan on finishing the sparge before leaving. When I get back I'll start the boil. does anyone think that this break will have any negative effects on the brew?

    Hello from Ottawa

Greetings folks, I been brewing for about a year and half, and have about 8 batches under my belt so far. Started off with the can and corn sugar kit, which turned out to be drinkable at best. Then I tried a couple extract + steeped grains which turned out probably worse then the canned stuff...
