    Just transferred from secondary to the keg and put the gas on it, set it and forget it method. I brewed it on 3/28. Looking forward to tasting it in a couple weeks.

    I am going to switch from the Montrachet to Nottingham for my next batch. Is it safe to do it in the carboy (I have a 5 & 6 gallon) or should I switch to a bucket? I know there is no Kreuzen with the montrachet but is that also the case for Nottingham? I usually let it go for 60 days...

    Apfelwein leaking from disconnect

    I just replaced the O ring with a new one and it is working fine. The old one looked "fine" to the naked eye. It is funny that I lubed them both and can't tell the difference btw the two but with the new one there is no leak and fresh flowing Apfelwein!!

    It is coming out the top of the QD. I just took off the O ring, lubed it up, replaced it and it is still happening.

    How carbed up do you like your Apfelwein? I kegged my first batch and set the PSI at 12 for three weeks. Not enough gas for me. Then I put it on 18 PSI for three days and still not enough gas. Then 25 PSI for 3.5 days. Pretty good carb level but still doesn't taste super bubbly in my mouth...

    I think it will be fine in the plastic. Most people prefer the carboys since there is no blow off and you can get by with an airlock. It does make it easier to see when it has cleared. I have been leaving my in the carboy for about 60 days and it is nice and clear.

    I am serving via a picnic tap. If it will help with the carbing, I am going to leave it on the gas for another 10-14 days. Do most people dial the PSI down for serving if they are doing the 12 PSI set it and forget it method for carbing?
