    beer style merge idea

I've mostly stuck to tried and true recipes, but what I went to do for my next beer, is use the brewing classic styles red ale grain bill , with the Hop schedule of the pale ale with caramel, from the same book. The og for both recipes is very similar, so I'm hoping it will turn out well...

    average batch sparge technique

I'm curious as to the general process everyone uses for mash/batch sparge. Does everyone usually calculate the mash by using X qt/lb of water, then let that sit for 60 minutes. Drain that into kettle. Then sparge with the amount of water you need to bring you up to your needed preboil volume...

what other competitions do you enter?

Ok, so I was pleased with my entry to the NHC, and would like to start entering more competitions throughout the year to help hone in my skills. So i'm looking at the NHC site that has a list of competitions, and a lot of them seem to be state fairs, where you have to bring the beer with you...

    NHC results for my entry

Did better this year (second time) with my ESB, my high score of 21 last year is a 32 this year. I havent gotten to read it yet, I had my wife tell me some stuff over the phone, but one thing that i got from both judges is that it "lacked complexity" I basically brewed the ESB from Brewing...

Planning for an american barley wine

Going to brew the american barley wine from being classic styles in june. I'm wondering about the yeast, should I brew something that uses wlp001 and use that cake, our just use dry yeast? I will probably enter this in some competitions, and I want to make the beer closest to style. Thanks

When is a beer too dry?

I brewed a pale ale, og 1.052 got an fg of 1.008 after 2 weeks in the fermenter, seems a bit dry, hoping some aging and carb will pick it up a bit. I was supposed to mash at 154, mashed at 152 instead, so I guess ghats why I didn't get a 1.012. Also did a saison, it finished at 1.004 from 1.060...

    Woops, forgot sugar

Had to add 1 lb of cane sugar to my Saison. not sure WTF is up with my hydrometer, but it read 1.060, but i got 1.052 from my refractometer, thought i did everything right, so i was like hmmm.... It really doesnt matter when i add it during fermentation does it? should i add it RIGHT NOW! or is...

    hydrometer vs refractometer

Brewed a pale ale yesterday, when i was done i took a gravity sample. my hydrometer read 1.060, which was a bit high because it was supposed to be a 1.052 beer (although at 75% efficiency it was supposed to be 1.057). my hydrometer is a bit off, when at 70F, it measures two lines above the...

Just ordered one. Already have a single stage, going to get this in time to be my saison. Will be really nice to have complete control over the temp in my fermentation chamber. Just psyched, and wanted to share.

    Boil off percentage

I'm just curious what you guys are using as your boil off percentage, if your using a keggle, or i guess any 15 gallon brew pot should be similar. the default in beersmith is 9%, which for me is a bit low, i tried 12, and i think that's too high. I'm going to try 11 this time, unless i get...

    Chiller built into keggle

i've seen some pics of keggle that has the copper pipe from the wort chiller built right into the kettle. Seems like an awesome idea. does it work as well as regular chiller? Worth doing?

    Entry in NHC

The ESB I brewed for NHC has a spicy character. Otherwise, its pretty good. Do you think I'll take a huge hit for this? for this beer, I chilled the wort down to 63 and added my yeast starter. Do you think that the temp difference caused yeast distress? I wasn't to prevent this next year. Thanks
