Do i need the protein rest?

I'm doing a Dixie blackened voodoo lager clone and it calls for a protein rest. I've never done one and don't really want to, just wanna know if it's absolutely necessary. The bill is as such, 16# 2 row, 5# 6 row, 1.5# chocolate and .75# C80. I understand that 6 row should get the protein rest...

Any ideas on my low efficiency?

So I brewed a raging ***** inspired clone yesterday. An 8.3% ABV, 1.083 expected OG. The grain bill was 12 lb Belgian pale, 2.5 lb Belgian pils and 1.75 crystal 40. So anyways I only got about 55% efficiency leaving me with 5.9% ABV and 79 IBU'S. Much higher IBU than what was expected. Ok, so...

    Need some hose help...

So I made the stepup to a keggle so in turn I got a larger immersion chiller (50' x 3/8"). I would like to use my smaller chiller (25' x 1/2") in some ice water before the large one. Anyways, as you can imagine the tubing I used on the smaller one wont easily plug onto the new one (too wide)...

What should I use these hops for?

So I have a lb. of US Fuggles and UK Hallertau each. I want to make somewhat of a IPA. These are rather low AA hops, 3.1 Hall. and 5 Fugs. My question is can I make a rather hoppy beer with these by just adding a S**T ton of them and what style should I use? I know the answer is, whatever I want...

    Washed yeast...Now how to use??

So I just recently washed some safale US-05 and have only used it in BM's cream of three crops. Im wondering what else I can use this yeast in. Im planning on a oatmeal stout next. So what styles can this particular yeast be used for, or whats the best I should say?

Im bout to give up on kegs.

I am about sick of messing with these damn things. Last night I unhooked the gas from my fully carbonated keg because it never fails to shoot up to 15-20 psi after I purge keg and redial in at 10. So I decided i was gonna try and loose some of the co2 in the keg by purging it a few times over 24...

    Naturally carbing with finicky corny

So I have a corny keg that will only seal when I pump it up to about 30 psi to "force seal" it. Ive tried dozens of times to work it, lube it etc. Its a reconditioned from midwest so it was tested. Anyways, if I wanted to naturally carb in this keg, would that be possible? Im assuming that there...

Is amber malt a normal ingredient for a wheat beer? Im really just looking for the color out of it. Grain bill is.....4.4# Wheat, 4.4# 2 row, 1# amber.

My 3rd AG. Hows it look?

Just wanted to see what the old timers thought of this recipe. Its supposed to be a standard orange wheat type. Stole some of the spices and proportions from biermunchers "wit"ness brew. Any feedback is greatly apprecatied. Orange Wheat Batch size 5 gallons Boil size 6.7 gallons Boil...

Full boil with brewers best kit.

Im using the brewers best red ale kit and it calls for a partial boil (2.5 gal). I would like to do a full boil but the recipe states that the IBU's will increase with more boil volume. Is there any way to account for this or should I just do the partial boil? I want the recipe to be accurate to...

    Clogged corny

I had a double milk chocolate oatmeal stout on tap last sunday for fantasy draft and not thinking anything of my friends saying its kicked, as Im sure they know by now if a keg is done, I untapped it. Went to clean it the other day to find out theres a good amount still in it (maybe 5 beers). I...

    how much is too much?

So I was brewing last weekend and the strike water drained well. However the sparge didnt wanna drain. After trying to stir the top a little with no luck I decided to stir deeper. No luck. Had to eventually hitting my SS braid so get it flowing again. I noticed the runnings had gone from a very...

I can't get a seal on my corny!!

One of the kegs from a kit from Midwest just won't seal airtight. It came pressurized so it should be able to seal right? No matter how many times I try to seal it there's always a leak from a corner of the lid. Is there anything I can do or try and get a new one from them? Pissed me off cause I...

    Do I need a washer?

When I went to buy my shanks, beer nuts etc. I was under the impression(from their website) that I would need a neoprene washer for between the tail piece and shank/beer nut part. The man who sold me the things told me I dont need it. Does anybody know if I do in fact need one or will it be...

    Damn 1.020!!!

Just racked my double chocolate oatmeal milk stout to the secondary after 3 1/2 weeks primary (got lazy). It was an AG with 1/2# lactose as well as 1/2# 100% cacoa both boiled in at last 15-10 min. OG was a little higher than my expected 1.054 at 1.062. Just chalked this up to the lactose and...
