    I was thinking of trying an oatmeal stout, using lcasanova's double chocolate stout as a starting point. Besides dropping the chocolate, any other suggestions?

    Infected starter? Pic

    Thanks guys. I did boil it on the stove while my main pot was outside on the gas burner. My previous starters (DME boiled for 10 minutes) never had this, so wasn't sure what to make of it. I'll give it a sniff tonight when I get home.

    I made a starter yesterday, and it has some funk on top this morning. I was out of DME to make it so I used some extra runnings from a beer I was making. What do you think? Infected, or just some Krausen starting up?

    Airlock activity in bottling bucket...go ahead and bottle?

    It was shaken up a bit while I was moving it, wanted to give it a chance to settle out some of the trub that got sucked up. And mostly because my 6 and 3 year olds have been going nuts all day, I wanted to wait until they chilled a bit before starting ;)

    So I transferred to the bottling bucket a few hours ago to prep for bottling, mixed in my corn sugar, and put on a lid and airlock to let it set for a while after moving it. I just checked on it and the airlock is bubbling. Is this normal for corn sugar addition, or has fermentation started...

    Follow up as I finish my last bottle, this turned out as a great well-rounded brew. My friends who don't go for the higher abv styles I usually make claimed it my greatest success, and I had my first "commissioned" brew session to recreate a few cases.

    How much risk waiting overnight to add yeast?

    My first all-grain is in the fermenter now, and ready for yeast. Unfortunately I broke my hydrometer a few hours ago...would it be ok to let the wort sit overnight (15 hours) and get another tomorrow to take a SG reading before pitching? Am I better off pitching now?

    In my opinion the best Dubbels (and belgian strongs) come from Trappist breweries. Rochefort, Chimay, Westmalle, and Koningshoeven all have excellent Dubbels that are easy to find.

    I brewed up this version a few weeks ago (accidentally did 3.3 light and 3 wheat) and it's going into the bottle today. I tasted a sample of it and it was GREAT, I can't wait to get this bottle conditioned!

    The homebrew store near me had sorghum extract last time I was there, but I'll double check that its not molasses. Did you use corn or candy sugar in the boil?

    A couple questions for ya... Is that the recipe for 5g? What kind of sugar in the boil? Would you have bottled with corn sugar if it wasn't 7g and looking thin? I'm looking to do a first GF beer, and all those ingredients I can get locally so I might give this one a try this weekend :)

    I always seem to end up with one 2/3 full bottle. I usually cap it, then open it after a week to see how things are going.

    How did the dark ale turn out? I'm about to tackle my first GF brew, and don't know if I should use one of these kits, or try an extract recipe from here...

    Beer won't stop fermenting, take it off the dry hop?

    1.062. Recipe had it at 1.074 so I either didn't do the mini-mash part right, or didn't mix up top off well enough. I'd guess the former since it was my first mini-mash. I'm surprised at how low it has gone, my problem is usually ending too high, not too low :)
