    Flavoring Apfelwein

Please explain how to backsweeten. I have a hard cider batch going now. Basically it is 5-gallons of apple juice, no additional sugar, and three packages of frozen raspberries. I used EC-1118 yeast. I've made this before and it comes out very dry and a bit sour but over ice it is delicious...

First batch of wine, yeast question

Hi all, I've posted some in the beer section but this past weekend I started my first batch of wine. It is a Selection Chardonnay kit. My question has to do with the yeast. It came with only one pack of dry yeast (Red Star- Premier Cuvee). The instructions on the yeast pack says that it...

A question about the "mrmalty" calculator

Thanks for the replies. Do most of you weigh your DME? The instructions given with the yeast starter kit gives a volume (1/2 cup IIRC) to 650mL of water. What is the relationship then between weight and volume of DME?

Malt liquor discussion and recipe thread.

They don't sell it here on island, but back when I was living in the States, Steel Reserve 211 was one of my favorites. That was before I began to home brew. My taste buds have probably adjusted now.

A question about the "mrmalty" calculator

Sorry if this is a silly question but when using the liquid yeast tab on the Mr Malty Pitching Rate Calculator, it gives a recommended #liters of starter required. Is this the volume of the DME/water solution that you boil before pitching the yeast? If so, what is the ratio of DME to water that...

Stuff in the bottom of my bottles????

Perhaps I am alone in this, but I fearlessly pour the entire contents into the glass. The 'trub' at the bottom is a little hors-d'oeuvre. I do notice however that about an hour after consumption, I begin to produce a rather odorous emmenation. Perhaps it is just a coincidence.

    Yeast starter, no kreusen?

How does one go about washing yeast? I've heard about using the trub at the bottom of a carboy as a yeast cake and pitching the new wort right on top. It this the same thing?

    Yeast starter, no kreusen?

Ah yes, AFN. That's all we get out here. Not too bad of a price to pay considering all of the other 'perks'. It kindof stunk not being able to see the commercials on Super Bowl Sunday.

    Yeast starter, no kreusen?

Living on a tropical island...what's not to like about that? Actually, there is a US Army base here with a bunch of radar equipment. I'm an electrical engineer contractor that designs improvements to the radar high-power transmitter equipment....and brew beer too.

Hello from the Central Pacific Ocean

Hi All, I live on Kwajalein Island which is an atoll part of the Marshall Islands chain. I am relatively new to brewing having only brewed my first batch on Dec. 28th. I have brewed eight batches to date with three in primary and one in secondary at this time. Since we have limited...

    Yeast starter, no kreusen?

This is my first post here and I'm a relative newcomer to brewing having only brewed my eight batch on Sunday. I've only been using yeast starters for the last three batches. I follow the instructions that came with the kit in terms of DME-to-water ratio. I boil the mixture for 15 minutes, cool...
