I use a chest freezer to maintain fermentation temps. Belgians and Saisons are good to brew here if you can keep your house at 75º or lower until you can invest in a fermentation chamber.
Since I only brew 10+ gallon batches I would have to say my Therminator. I couldn't imagine babysitting a 15 gallon pot after drinking... I mean brewing all day.
Had the same thing happen to me today. I brewed the NB AG Chocolate Milk Stout and ended up with a gravity much higher. I did have to replace the grains with grains from my LHBS since the false bottom was slightly warped and caused a completely stuck sparge the first time.
I ended up with a completely stuck mash and ended up tossing the mash. Same exact situation found on this thread https://www.homebrewtalk.com/f36/first-g-abortion-209960/
1. Brew bigger styles (Barleywine's etc) in time for next winter
2. Grow hops
3. Begin lagering mainly for Bock's and Rauchbier
4. Start formulating my own recipes
5? Maybe start slanting yeast again or washing
I just made the all grain plunge this week so that is part of 2011 goals.

Hey I am actually starting a new brewing app and I am looking for some input on what you guys want to have in an app. I will definitely need a few beta testers along the way.
I have been brewing for about 8 months now and looking to step it up to a keg system this week and all grain sometime this year. Found some great info here and hope to be able to help others soon.
