    slow fermentation

    The exp date on the yeast was in july of this summer, I have used a batch with the exp date in the same area, I really hope that the temp will bring things up to par. THe lhbs is one hour away and It would suck to drive that far for a vial of yeast.

    my temp of wort was probelly around 90es. I then added it to 2 gals of cool water in my carboy, then toped off to 5 gals, with more cool water, then pitched yeast.

    I just brewed a 5 gal bath of a Roasted Brown Ale, from papazian,(pg.197) I cooled the wort with an ice bath and brought the temp below 100F. I then poured the wort into my 6.5 gal carboy and shook like crazy. there was plenty of foam on top. I then pitched the yeast, English Ale (WLP002)...

    Im getting ready to do a "old Jock" clone from clone brews, it calls for M&F light DME, but i think that my lhbs has only laaglander and ID Carlson. Which one will work out better.

    Not enough Yeast?

    Taste a little flat, but i used 2/3 cup of Corn Sugar. The FG was 1.038, for several days. There was some Krausen, but not a whole lot. It is still drinkable, I just cant brag about this batch. Thnx

    When I was pitching the yeast, as I opened the vial, it started to foam and some (maybe 1/3) was not able to be pitched into my carboy. As the fermentation went along I noticed a great deal of sludge at the bottom of the carboy. Is this sugar that did not get converted by the lack of yeast? I...

    Avery's Maharaja Imperial IPA

    I just bought a bottle of Avery's Imperial India Pale Ale, called The Maharaja. Has anybody had this before? I have never heard of an Imperial IPA. The label says that the OG was 1.092 I hope that it lives up to my expectations.:rockin:

    new chiller prep..??

    Im wanting to make a immersion chiller, what are the basic things that I need to get it set up? I was thinking a 3/8 id copper at 20 feet and fittings to run fromn my kitchen sink. Is this the right idea?

    dogfish head 60 minute IPA

    Does anybody know of the corked wine bottles of DFH. I think it was the 90 min. the label had a guy driving a nail into his nose. I have not seen these bottles in a couple of years, but I hopping that there are still some out there.

    What turned you on to the good stuff?

    I saw the light when I bought a pint of Samuel Smiths's Oatmeal Stout while on Phish tout in 1999. Since then I will usually pass up a "light" beer. Other early staple of my diet where Orval, Hobgoblin, Bass, Dogfish Head 120 IPA ( With the corked wine bottle) and the list goes on and on...
