Let's hear your "crazy stout" ideas!

One of my favorite coffee drinks has both chocolate and cayenne and it's delicious...maybe the chocolate-habanero or mole stout, but add a little coffee?

    Brewing Classic Styles recipe ????

The way I would convert it (and this might be less than precise because of other factors) would be to do a simple ratio equation with each ingredient: amt of ingredient called for in original recipe/7 gallons= actual amount needed (x)/5 gallons cross multiply to get (amt called...

Any chance hops can be infected?

I think it's pretty unlikely that the hops themselves are introducing the infection. Besides their natural antiseptic properties, like you said you're boiling the snot out of then. Maybe try making a hop tea with some of the Target to see if you can isolate the off flavor to them? If it's...

Pac Man, 001, s-05...basically anything clean and boring (read:versatile) if I'm going to have to use it for EVERYTHING. As someone else pointed out, there's always difference in temp to give it some variation.

No price break, but the convenience of having a variety of ingredients on hand so I can brew whenever I...

    Storing wort

Oh and, PS, I've also been canning sterile water for yeast washing. The boiling process helps deoxygenate the water and helps puts the yeast to sleep. But you want o2 in the wort when you actually pitch the yeast.

    Storing wort

I've recently started boiling a big batch and canning sterile wort. I just store it in the fridge for starters, since as far as I can tell the ph requires refridgeration. This might be my new favorite brewing strategy. No, boiling and cooling DME for a starter isn't much of a big deal. But...
