Help with Brew Pot Selection Please

So I took a little hiatus from brewing and am excited to finally be getting back into it. I used to just brew mini-mash in my kitchen on the stovetop in a 5 gal pot but want to expand my horizons. I will be brewing 5 gal AG batches, and would be interested to know if the following would be a...

    Apfelwein Uh-Oh?

I made apfelwein the other day, and without thinking used a packet of dry yeast that had been sitting in my Arizona (very hot) garage for a month. After 24 hours I didn't notice any activity...and assumed I'd just killed it. Then I wake up this morning and notice something unusual. The...

    Dead yeast?

I just got back from a month-long vacation and I found a packet of dry Montrachet Wine YEast that had been sitting in a brewing bucket in the garage (1 month old). I live in AZ and temps get up to 110 degrees so the garage could have been 120 or so. Would that kill the dry yeast? I just...

    Reusing Yeast Cake

I have a batch of Edwort's Haus Ale in the primary. I am planning on kegging and then brewing another identical batch on the same day. Can I just pour the new batch right into the carboy that I just emptied in a keg? Somewhere I read to use a quart jar and not to pour directly onto the whole...

    Willamette versus Cascade

I was going to brew Edwort's Haus Pale Ale and have all of the ingredients, but somehow had a brainfart and got Willamette hops instead of Cascade. I know Cascade are the thing to use for American Pale Ales...but... Should I make another trip to the HBS? What will the flavor differences be?

    Sixth Barrel Torpedo Keg?

I have the option to get a hold of a sixth barrel keg (the person also called it a torpedo keg?). It looks kinda like the traditional 5 gal soda keg, and is supposed to hold 5.16 gallons. (See link) http://www.micromatic.com/images/articles/11/Kegs-new.jpg Will it be easy to fill for...

    Newbie help. Done Fermenting?

It has been in the primary for 14 days. There is still a layer of foam/bubbles at the top. I just took a gravity reading and in these 14 days it has dropped from 1.060 to 1.010. I was planning on bottling today but do not want bottle bombs :) Should I give it another day and take another...

    Fermentation Cooler Plans?

The "Son of Fermentation Cooler" plans by Ken Schwartz are often talked about, but the PDF for those plans is no longer available on his website (his website appears to be gone). All the old discussions about the plans have links that are now broken. Anyone know of a good step by step or new...
