    Infected DJ

I've just been given a half dozen old glass DJs, on of which contained the gloopy natural reduction of 15 year old wine - looks like oil, smells like vinegar. Someone told me that once a DJ had got an infection (and therefore smells like vinegar) you'll never get it out - but I can't see that...

    Aging Wine

Is there a differnce (once the wine is clear) between Aging for 3 months in the DJ, and 3 in the bottle vs Aging 6 months in the DJ, then bottle and drink ?

    Yeast Quantities

I've been thinking - given that the yeast basically "breeds" in your Wine, does it really matter how much yeast you start with? as far as I can gather the only difference it could make is a small difference to your total fermentation time. I ask 'cause I've been looking at the high alcohol...

    Sterelising with Campden

    raisin wine

How would I go about making it? My guess is: Boil and blend a good old ammount of raisins, and then treat it like cartoned fruit juice - how close am I?

I've got a 2L batch of orange hobo-wine (in a pop bottle with a baloon 'valve') made as follows: 1L pure OJ 14oz Sugar Water Yeast + nutrient starter After just 3 days the fermentation seems to have stopped, and there is a LOT of yeast in the bottom of the bottle. Has it crashed...

    Free bottles and Lable removal...

Well, after all my questions about corking my old screw top bottles, I had a brainwave... The bottle bank in the municipal car-park near the top of our street rarely if ever has the lids locked, so I took a load of our glass for recycling and came back with 20+ (formally corked) wine bottles...

    Tapered corks

Do tapered corks provide a good enough seal for keeping win 12-24 months?

    Re-usable corks?

I find it hard to believe they're any use, but they are by a homebrew co. (rather than being aimed at using as a stopper between glasses). any one used them? Young's u Brew Wine Corks/Re-usable Plastic x 12 at Wilkinson Plus

    Screw Top bottles

Can I re-use the screw-top wine bottles for my home-brew wine, or do I need to get hold of some bottles and corks?

Total noob from Whitby, North Yorkshire, UK

Hi all, Just started my 1st ever home-brew; 2x2l pop bottles of (what I hope will become) apple wine with balloon air-locks and bread-yeast! :) I had visions of being able to drink the stuff in a month - a home-brewing friend of mine has told be that (once it has fermented) I'll have to...
