The only cons I can think of is whether or not it's worth it cost wise after you factor in the cost of DME and the time spent because dry yeast can usually be bought pretty cheap.     2022 German crops were poor compared to average seasons. I compensated by adding in some Magnum and occasional Herkules to adjust ibu's. Maverick hops adjustment tool really comes in handy. Most good German beers are malt forward anyway. The beer still taste great. DMF.

    Thanks for the chart day_tripper. As far as I can interpret the tank is about 150% overfilled. So for now I'll just make sure it doesn't get hot and blow the burst disk. According to the tare weight listed on the tank neck it looks like an extra 5 lbs got put in unless I'm missing something...
