    I bought a Kona variety pack that included the Big Wave, surprisingly delicious. The hop aroma on this beer is incredible, I got a feeling this is brewed with some hop extract very late in the process because I get almost zero hop bitterness.

    I would guess he was smelling isoamyl alcohol, it's a fusel alcohol that's common in beer. It's also common in wine and much easier to detect because it's usually at much higher levels than you'd find in beer. Just a guess though.

    A couple other things you can do to reduce esters are increase the yeast pitching rate, and increase the oxygenation level with pure oxygen.
