    Whether to Secondary Ferment or Not?

    I always let my wort sit in a secondary for at least a week, as I bottle and I have less sludge in the bottle that way. It also provides for a more clear product.

    The following has not failed me yet! 2 weeks in primary, 2-3 weeks in the 2ndary (depending on product) then bulk primed and bottled.     Soured wort?

    Well, I finally got around to putting this into bottles! 2/3 cup of carbonation sugar into the wort then bottled. I am using Grolsch style bottles so I don't have to cap. Tasting it during this, no more soured taste, just smooth fresh ale. Now to wait a couple of weeks for the additional sugars...
