    Measuring carbonation

We all use those standard equilibrium charts to set our CO2 regulator pressures to achieve the carbonation levels we want for the style of beer we are brewing. For me this is almost always 10-12 psi, to get to the ~2.5 volumes CO2 that I usually shoot for at the 36 degree temp at which I force...

    Cold IPA

New trends confuse me. I get it, IPL is an IPA recipe fermented cold with a lager yeast. Not a fan. To me tastes like somebody spilled hops in my lager. But cold IPA? Why cold? The discussion I hear is that most use lager or hybrid yeast at ale temps for this style, but are actually fermented...

    Carbon water filtering

Does anyone have a good recommendation for carbon filtering water from an outdoor hose spigot? I don't want to go full RO, and the blue canister filter I bought from MoreBeer a few years ago leaks. Was never super happy with this filter, so I'm not keen to replace it. Any good alternatives?

    Moonlight's Old Combine

Old Combine is a wonderful 4-grain lager produced by Moonlight Brewing in Santa Rosa (barley, oats, wheat and rye). The grains are in perfect balance to create a rich, malt-forward lager that is only mildly bitter and lightly flavor hopped with some earthy hops. Has anyone tried brewing Old...

    Pressure fermentation question

Pieces of this topic in other threads but I can't find in one place. If one takes higher temp and shorter fermentations off of the table, what are the upsides and downsides of fermenting under pressure at traditional lager and ale yeast temps?

    Filtering vs Cold Lagering

How many of you filter their beers in lieu of cold lagering? Let's assume fermentation and warm maturation are 100% complete. As I understand, cold lagering is performed primarily for beer clarity and not for beer flavor. During cold storage, residual suspended yeast and haze compounds...

    Improving the Accuracy of Measurement

Curious what others do to improve the accuracy of gravity and pH measurements during the mash. Because the initial wort is so murky, I'm not getting reliable measurements for either. For gravity, I use a calibrated digital refractometer as I found it took too long to cool the wort down for a...

    Gigayeast ending operation 7/16

Sorry to hear this about Gigayeast. Another pandemic victim? I have really enjoyed their strains and 200B cell packaging. https://gigayeast.com/

Using Hops in the Freezer for WCIPA

Planning on brewing a west coast / clear DIPA this weekend with 2-row and Vienna malt. For hops, I'd like to use some open bags of Galaxy, Mosaic, Citra, Columbus and Simcoe hops in the freezer. Only have 2 oz or so of Citra and Columbus but plenty of the others. What hop schedule would you use...
