    Priming au naturel

I caught myself 3 bottles in; however, at first I forgot to add my priming sugar. This gives me 3 bottles that do not have priming sugar added to them. I have read before that over time, they will carbonate; however, it will take a long time, and the carbonation will be limited. I am...

    Separation

I didn't notice this earlier; however, when I brought my beer into the kitchen from the closet, it appears to have some separation at the top. At first I thought it was an illusion created by the curvature of the carboy; but, on closer inspection it is really there. There is a dark band at the...

    Strawberry wine continued....

This is a continuation from another post. This is a strawberry wine I started back in May. Racked again today; the SG is ~0.992 (OG was 1.086) giving me a ABV of 12.3%. The flavor is good; however, there is still an alcohol bite as well as a slight alcohol aroma (although it is faint, it is...

    Got a problem.....

All but one of my carboys are filled :rockin:, and I backed myself in to a corner. I have all my 3-gallon carboys filled with wine; however, I need to rack them and don’t have a third. What I do have is a 5-gallon better bottle that is empty. While it will suck having to do double cleaning...

    Hop pellets......

SUCK Used them for the first, and last, time yesterday. It was a bear trying to pour out the wort and not get some of the trub in there. I used a grain bag, which helped a little; but, there was still a lot that found it's way out. Oh well, only whole hops for me!

    Adding campden tablets

To keep it short, I didn’t write down on my sheet if I added a campden tablet at the last racking. Would it be better to add a campden tablet, or better to let it go to the next racking and then add the tablet? **Note this is strawberry wine.

    Florida mini-vacation

The wife and I are headed to Pensacola, FL for a mini-vacation. Anybody been there or live there, and can you recommend a hotel or condo? Or more importantly, any place I should not stay?! We looked at the Days Inn (located on the beach) and a condo, IIRC called the Sand Dollar. They looked...

    Lime wine

Made some Lime Wine on Sunday, and pitched the yeast on Tuesday night. Whew! It smelled TERRIBLE the next morning! It has gotten better over the last two days; but, still has a faint smell to it. If anyone has ever cultured coliform bacteria using m-endo broth and gotten a really ripe plate...

    Plastic Valve

I know the HDPE buckets will hold up to the heat; however, will the plastic valves (on bottling buckets) hold up to the heat? I am more concerned about the rubber washer than the valve itself. What I am wanting to do is pour the wort from the brewpot into the bucket (with water in it), and...

    Beer vs Wine Fermentation

A question I had not thought about until the wife asked me. Why does beer, unlike wine, not ferment all the way out? Seems like it stops around 70% or so. Is the yeast used not alcohol tolerant above X%? Unfermentable sugars? Ex: If I start a beer and a wine at 1.050 SG, the beer will go...

    Yeast/Sediment on side of bottle

I noticed when looking at my bottles today that there is a little bit of sediment on the sides of the bottle. All the glass ones seem to have this, (the plastic PET bottles do not) and if I gave them a little rock/shake and some of it seemed to drop out. Anybody else notice this or experience...

    American Pale Ale

I was toying around yesterday with some equations and using mock recipes for the calculations. I figured I might give one of them a try; however, being a noob, I wanted to post it and get feedback. I have not decided what I want to do with the hops (nor have I done many calculations yet) so I...

    Calculating Malt Bill

I am reading Ray Daniels, "Designing Great Beers" and trying to understand the process of calculating the malt bill. For those of you who have the book and would like to follow along, I will include page numbers for reference. I am using the calculations he has listed on pages 29 and 30...

Wife thinks wine taste like beer....WTH!

Thieved some of my strawberry wine to get a SG reading (0.994) and decided to give it a little taste. I think it is fine; however, the wife thinks it tastes like beer. I had this same problem with EdWort's Apfelwein, her and mom thought it tasted like beer. So am I missing something, could it...

First brew, hot wort, and siphon

Did my first brew this weekend (IPA for the inquiring minds), and all went fairly well. The best thing about it is it was a great learning experience. A few of the things I learned: • Make sure all tubing, no matter how snug, is connected with a hose clamp • Don’t bother putting the mop and...

    Increasing wine volume and sugar

It is a problem to have. I was originally making 3 gallons of strawberry wine, and through human error added too much water, bringing the volume to 4 gallons. My plan is to bite-the-bullet make 5 gallons worth (oh the horror); however, I am not wise in the ways of determining how much sugar to...

    No label/White label AB beer

Question for you guys out there? Came across a beer can today, it is all white/no label, pop-top style, and is made by A-B. Does anyone know what this beer is or when it is from? I did a quick search on google but came up with nothing. Thanks!

    Capping bottles

I read a post a while back and now I can't find it; however, I wanted to ask about capping bottles. Can I cap wine bottles with beer caps? A few posts mentioned champagne and sparkling cider bottles; but, I couldn't find any about regular wine bottles. At the moment, I don't know enough...
