Mangrove Jack's M54 Californian Lager Yeast best practices?

I pitched one pack of M54 in 6USG of 1050 OG red ale type wort at 23:30 on a Sunday night at 58F - straight from the pack. No oxidation - just a 1m tap to carboy drop via a funnel - high krausen within 12 hours, no further sign of fermentation by Thursday morning. It cleared nicely without cold...

I Got Your Stout recipe in Zymurgy

In my last stout I got a 1070 OG, with 4KG Golden Promise, 1KG torrified barley, & 0.5 KG roast barley. I used 100g EKG: 40g @60m 20g@30m 20g @5min10g@1m & 10g@fo. I used 1 pack of K97, & 1@MJ M42. Blow off tube very much ch required. Fantastic beer. The krausen is very thick and fast - but...

distillers / high diastatic power malt

I got hold of 1 KG of 'High Power Diastatic Malt'. (I ordered it when somewhat 'refreshed'.) I put it in a stout mash with 1 KG Crisp 'Best Ale', 2 KG Golden Promise extra pale, 1 KG torrified barley, 0.5 KG UK 60L crystal and 0.5 KG roast barley. Mashed at 148. Bittered with EKG & added EKG &...

Every batch I make is sour

I'm a scrupulous cleaner and sanitiser, but last summer I had an acetobacter infected batch of rye ipa. I usually keg, but for this batch I decided to bottle. I had been juicing apples and pears for cider and perry, so there were plenty of fruit flies around, but all my bottles and lids were...
