    Single bottle force carbonating help.

After years of drinking more than is considered healthy, I'm taking a little hiatus and exploring other fun beverages. The passion is still there and I've switched to craft NA beers, hop waters, seltzers and hop teas. I still have pounds of hops and a bunch of teas, why not make my own? But I'm...

You know you're a home brewer when?

When your wife asks why you have to hoard all the 1liter seltzer bottles and you have to explain you're making a high gravity beer with some fermentable adjuncts and you don't want a bottle bomb. I mean, c'mon.

    First high gravity brew (help)

I used a Belgian ale yeast. It came with a kit, don't remember but I know it's been compared to wlp550 when I was ordering. I only aerated to incorporate the yeast and stir sediment by jostling the bucket. It's only been one week. I haven't used my hydrometer in a year. And only used my beer...

    First high gravity brew (help)

5 gallon brew, 12 lbs LME, after boil off, topped off with cold filtered water to get to 5.5gl. I added at least double the yeast pitch as usual plus a yeast starter after 12 hours of no action. Took a gravity reading after 1 week and hydrometer read 1.040. Usually my 7% beers get to 1.012...

    Watching the air lock

Brewing my first real high gravity beer and woke up this morning to find it bubbled over and airlock filled with...whatever.... I almost asked my son to setup my security cam in the little nook I have the fermenting bucket so I can watch while at work. Instead, he's just sending me pics and vids...

    Suggestions for Belgian dipa/quad.

I'm ok with an srm way lighter than a quad. This is more of a Bigfoot style barleywine but going toward quad in flavor. I added Crystal, Newport, TriplePearl and German Polaris hops. 5oz in all. I was under the impression that figs and dates don't fully ferment out so I thought there'd be...

    Stroopwafels in secondary

Put them in a plastic bag, roll them with a beer bottle, dip mouth of beer glass in honey and rim the glass in stroopwafel crumbs.

    Suggestions for Belgian dipa/quad.

I'm going to try to use up a bunch of stuff I've had laying around for a while and I just got my delivery of StarSan. So right now I'm looking at my 6lb wheat LME, 6lb amber LME, and a bunch of off brand hops. 5.5 gallon boil for 30 minutes. I am aiming for a 65 ibu and after bottling half the...

    Wheat LME vs. pilsener taste.

It's from Northern Brewer. I've got a good track record with them.

    Wheat LME vs. pilsener taste.

I got 36lb. And a few hops. Let's do it.

    Wheat LME vs. pilsener taste.

Thanks! I have had wheaty beers in the past but they rarely go far beyond a hoppy wheat but still tastes like a bitter heffe.

    Wheat LME vs. pilsener taste.

If I'm not using a wheat ale yeast that gives that banana clove eater, will it taste ok? Should I just still with my pils lme?

What's the "weirdest" ingredient you've used?

I think I used Crystal Northern Brewer (1 oz each) in 1.5 gallons for ~1 week. Just dumped them in after 1 week of fermentation and then waited until everything settled out. Racked then cold crashed. Then bottled. I also made a blend of white grape, apple and pear juice to try to make a cider...

What's the "weirdest" ingredient you've used?

I've been dry hopping my hard ciders lately. It's actually really delicious. I get them as dry as possible and it tastes kind a fruity dry white wine.

    Wheat LME vs. pilsener taste.

Long time, no post. I've been trying my hand with other fermentables in the new house and new job. But I want to get some Northern Brewer wheat LME in bulk on sale. Still have a bunch of hops in my freezer that I need to use. I don't love a lot of the darker notes in my beer. I like pilsener...

    Make IPA Clear Again

Sip of Sunshine is a classic here. Heady Topper was a game changer and considered the OG hazy. I actually really prefer the sweeteners and aromatics that are picked up by dry hopping rather than using a sweeter malt bill. The more traditional US or East coast IPAs with more of a malty presence...

    Make IPA Clear Again

As a wcipa guy, I am coming around to hazy IPAs for the single fact that they are less juicy than they used to be. I love VT IPAs. I'm in CT and they hazy boys are getting less cloying and fruity. There's bitterness coming back. It's like people realized they're making beer for all the beer...

    Just EFF it "beer"?

I've priced out a gallon of black strap and some charred oak. This is gonna be an easy first run, I think. As a test, is there a minimum amount of liquid I should put in a 3 gallon still as a trial run? I was thinking about buying some 40s of malt liquor and just testing the general process and...
