    'new old ale'

    beer kit ingredients

    I love ales from the British Isles..I have noticed that a lot of 'kits' for British ales use American hops and sometimes American yeasts..If I want a British ale,shouldn't the kit have both British hops and yeasts for the 'full' taste?

    did I ferment too high ?

    I bottled a batch of NB English Pale Ale 2 1/2 weeks ago..stuck with NBs kit,except I added 1 lb extra of DME..between primary and seconday,it was almost 6 weeks before I bottled..Nottingham yeast was used...stick on thermometer showed 67/68 degrees,except the 1st 2 days when it hit 71..since...

    auto-siphon......problem ????

    yesterday I bottled another batch..this was my 1st time using an 'auto-siphon'..the A-S ,I got has the 3/8" OD tube...I connected a 3/8"ID hose to it and started the transfer to the bottling bucket..I noticed that where the hose and the siphon tube come together there was a generation of bubbles...

    unusual high OG

    cheap pint[shaker] glasses

    If you are as good with 'glass' as I am,cheap glasses are the only way to go.. My local Wal-Mart carries 'Anchor' brand...the model called "Belle' is a close 'shaker'..17 oz and only $7.97 per 12 glasses !!..a dozen should last me less than 6 months before they get 'Humpty-Dumpty' syndrome..

    1st brew..need some assurance....

    air lock...in or out ??

    just finishing up 12 days in my primary and about to rack to my secondary..primary has bottom spigot to transfer..question is:when draining to the secondary,there will be a vaccum pulled on the primary..should the air lock be in or out ??...afraid of any contamination that might get sucked in...

    hop question

    Please bare with me,I'm new to homebrewing...I have a 'Porter 'kit ..It has 2 varities of hop pellets..the 1st hops boil for 60 min and the 2nd hops boil for only 1 min..since the 2 nd hops only boil for 1 min.-should they be crushed to get their full inpact or left whole ??

    a bit confused

    I'm a bit confused on something...I have a 6 gal glass carboy and a 6 1/2 gal fermenting bucket..I see some ferment in the glass carboy and transfer into the fermemting bucket as their secondary fermenter and some ferment in the bucket and secondary ferment in the carboy..which is the right...
