    Antivirus software - whose?

I have been using Norton 360 for a number of years, and never had a problem or virus. The 360 program seems to take care of the usual tune-up and security stuff. However, recently I can see the Norton file in File Manager using up a lot of memory and the machine really slows down, especially...

    beef back ribs

How do you cook these? Long and slow on a smoker, like pork ribs? The ribs themselves were about 5 inches wide and the whole rack about 15 inches long. There looked like about 3/4 Inch of meat between the ribs. This was the first time I have ever seen Beef ribs. SWMBO made the comment...

    Starter storage?

My yeast starter has been going for 24 hours and now my brewing plans for tomorrow will be delayed for a couple of weeks. I plan on sealing and storing it in the fridge, but what do I do when I am ready to use it? I am thinking of decanting and then making another starter solution a day, or...

steeping & sparge water pH - tannins

I think I know the answers to this but thought I would post to see what others have experienced. I've read that in all grain the pH of the mash should be around 5.6 to prevent the extraction of tannins. I've also read that high pH water - will extract more tannins from grains than low pH. I...

    Fluorescent light & skunky flavors?

We all know that sunlight and clear carboys can create skunky flavors, but can florescent lighting do the same? I keep my carboys covered during primary and secondary fermentation, but am curious if anybody has any experience with this.

    amateur night?

So, what's everybody doing on "Amateur Night" tonight? - Breaking in the New Year with SWMBO? - Party your head off - Nothing special - in bed before 12:00.

    crushing grains?

So, if you didn't get your grains milled/crushed, and you don't have a mill, what can you do to get the job done? Can the grains be put into a food processor and "pulsed" a few times? I realize you don't want to make flour, but what are the options?

    Tecate extract recipe?

Does anyone have, or know where to get, an extract recipe for Tecate?

    How much do you sparge?

After steeping the specialty grains for 30 minutes at around 160^F, I've read that you should sparge (rinse) the grains to get out the remaining flavors and color. How long do you do this? I've been rinsing the grains using 150-160^F water until there isn't anymore color coming out. With...

    Morebeer - LME packets

I just got my recent order from MoreBeer and the LME came in 3 & 4 lb foil packets instead of the plastic containers? Was that just an anomaly or is MoreBeer making a change in their packaging? These foil packets are a real pain the rear to get all of the LME rinsed out plus being a mess. And I...

Bittering hops - finishing hops mix-up

Made an English Pale Ale from a kit. It came with 1 oz of Perle Hops (Bittering) and 1-1/2 oz of Willamette Hops (finishing). Well....I got them mixed. Didn't notice it until I went to add the finishing hops for the last 5 minutes and discovered my mix-up. So I figured "Oh Well" and through in...

    Tap-a-draft CO2 cartridges

I'm getting ready to by a Tap-a-Draft and the catalogs for these sell 8 gram CO2 cartridges. Can you use the 12 gram CO2 cartridges that are used for CO2 BB guns? It would be a lot easier to get from the local sporting goods store. Besides morebeer has these out of stock until May 15. Unbelievable!!

    Anybody tried "tap-a-draft"

I've seen the "Tap-a-draft" kegging bottles and valve set up in a few on-line supply catalogs. Anybody tried these things? They look kind of cool for a portable way of carrying your homebrew to picnics and stuff. One catalog (Williams Brewing) says they are reusable "until they get damaged...

    Freezing Harveted yeast

There is an article, that was linked in a post here someplace, by Schedhelm that described a procedure for harvesting and freezing yeast. The process consisted of freezing the yeast in a glycerin solution. When it came time to use it would be thawed for five days in the fridge, brought to room...

How does SWMBO feel about your hobby/obsession?

What's the general feeling? 1. Supports it. Enjoys helping to brew, and makes suggestion on brew stuff to buy. 2. Is OK with it, as long as it doesn't interfere with her side. Likes some brews. Wonders why you need all of that "stuff". 4. Tolerates it. But figures it's a better...

Can I rack to secondary before done in primary?

I did a California Common with WLP San Fran Lager yeast a week ago. It's been at the bottom end (54^F) of the listed Optimum Fermentation temp (55 ^F). It has had about an inch of Krausen for the entire week, and still does and is bubbling at slow but steady rate. Here's my delimma - I've got...

    Rinsing your steeped grains

After steeping and dunking the grains, I've generally rinsed the grains bag with hot water (around 150^ F) until the water coming out of the bag is pretty clear. I read not to squeeze the bag as it will release tannins. When brewing Stouts grains, you can rinse a long time before the water...

    Doged a bullet from SWMBO

I am pretty sure I dodged a bullet. I use a bathroom in our basement as my fermenting room because I can control the temperature with a small space heater (much to the distain of SWMBO). It is the "guest bath", so it is decorated with that sort of "stuff" that they do to a perfectly useful...

    A lighter shade of brown

I've been using Sam Adams bottles for a long time. Recently my son wanted Sam Adams Light. OK. So, I saved those bottles too. As I was going through the ritual of soaking the labels off, I noticed that the Sam Lite bottles were not as dark of a brown as the "regular" Sams. Any ideas why?
