    Bottling Time!!! Couple Questions :-(

    Well I just finished bottling...48 beer bottles later and I am done! I tasted it and BOY IS IT GOOD!!! As soon as it hits your tongue it tastes like Apple Pie (exactly what I was going for) then as you swallow it tastes like a dry dessert wine. That was just the still sample. I am sure it is...

    An exact date? I don't have one...a fairly accurate time frame...well over a month. It's going on 2 months now. There hasnt been any airlock activity now for over 2 weeks but I continued to let it sit because I saw a few bubbles rising up from the depths of the cider (very small bubbles)...

    Is cider light sensitive?

    I was just wondering...what does light-stuck cider look like. I am beginning to think that my cider has been struck. I used clear cider and it is cloudy orange...makes me think maybe it's struck and I should just bottle it. It still tastes good though.

    Yea I used Cote and barely had any. Like I said, MAYBE 1/2" or so.

    That's peculiar that you say that. I used cider and mine didn't need a blow off. It had MAYBE 1/2" foam at the top...and 1/2" is being VERY generous.

    I used Cote des Blancs on my spiced Cider and I like the way it is tasting right now (in it's clearing phase) so I am thinking of just using that again. i only have Cote and Montrachet in my fridge.     First Label Made

    I like the label. Nice colors and layout. One suggestion would be to stretch it width-wise just to keep the text away from the edges of the label and maybe scoot the text a bit away from the picture.

    I am currently in the process of making a spiced cider and used 2.5 small sticks in a 5 gallon batch. When steeped with the other spices it smelled mellow enough. WE shall see though.

    It's funny that you mention this. When I started asking my buddies to save them one of them reminded me that WA is littered with recycling cans in public. Being from CA, I am used to people turning them in to get some money. My apartment complex has recycling right next to trash. Problem solved.

    That's an interesting test against baking soda. I would conclude that the test would show it does contain vinegar but hey, I am only in the process of doing my first batch. Kudos on ingenuity for the test though. I never would have thought of something like that.

    Pumpkin Pie Mead?

    Now I'll have to keep my eyes peeled for some cheap honey. I was at my local grocer and I saw a little tiny thing of honey for like 15 bucks! CRAZY! I have Cote des Blancs and Montrachet in my fridge...how do you think those would fare?
