    BRIX

    I got my thingamajig in the mail yesterday. I looked up the calculator on line and it appears I need 10 BRIX to get a 5% beer doing all grain. My question is: Should I shoot for just 10 brix or maybe bump it up a little to end up with a a nice 5% pilsner? Thanks in advance.

    too hoppy 2 dry

    1 gallon half pound dme and 2 pounds Pilsen malt grains. I steeped the grains over an hour boiled for an hour adding in the dme to get my gravity up. added a quarter cup cascade to the boil at beginning. What can i do to make this not come out so nasty yet still have a nice kick like this batch...

    First time ever I added in yeast nutrient. Shes bubbling like crazy. Houston we haz lift off. Gonna allow this stuff to go 3 weeks, All I want is a nice mild drink to partake of on weekdays.

    Stinky Cider

    I used Lalvin EC 1118. I added 1 cup sugar. let it bubble for a week then bottled it and let it sit for a week. Stinky but ass kicking. Is this common? Please help.
