    Brewing Lager beers at Ale temps used to be called "steam brewed beer" that I knew of. Anchor Steam was one of the commercial ones. I believe the Corona's were made this way due to lack of refrigeration and climate in Mexico way back when (and still today for climate)

    years ago I used to use the dry malt extract because of price. now I use liquid extracts as they don't have the tendency of wanting to BOIL over right away like the DME's do.

    I was talking to a group of folks at a car show and was telling them about homebrew. there was a psychologist in the group that SCREAMED at me that any one that had TWO beers was a total alcoholic!! That was kind of the end of the conversation!!

    I've never bothered whether it was a lager or ale and everybody I know that has had my beer has never commented about the color. I've had only one guy who did not like any homebrew or microbeers. He was/ is a miller lite fan. what can I say?

    the dark beer if it was transported properly is very nice. Kind of like a Paulaner salvator. Close... it has a nice rich creamy head and it laces on the glass real nice. has a nice finish with no real after taste unless you got a skunky one. I'd like a recipe for this one myself. Bob

    The best commercial?

    I managed to get a bottle of Orval and it had LIVE yeast in it. Date on the bottle was only 2 months old. I actually was able to clone Orval. OH man is it good. I've tried many times to harvest the yeast of Chimay so I could clone it and I haven't been able to for 28 years or so now.

    I still love my Orval clone. it is slighty citrusy or fruity and then just a little bit sour. man is that good stuff. Of my friends who "know" beers, they all love it. I'm going to have to make another batch before I run out.

    I still have an OLD IPA recipe that makes a very nice (MILD by todays standards) IPA. As for the commercial IPA's in my opinion they WAY overhop them. I like Dogfish head 60 and 90 minute and have never been able to find the 120 minute version. With that said. If you are BURNED out on IPA's...
