    Beer served hot

Okay, so probably the 120 proof bourbon earlier in the evening had something to do with this, but hear it out. Saturday, I brought a growler of my GP/Chinook SMaSH to my GF's, even though it had only been carbonating for 2 days. It was still foggy and undercarbed, but very zippy and...

Beets: not as powerful a colorant as I thought

...but still awesome! I have a batch of lager with some fermentation issues (WCPL #1), so I'm throwing stuff in the keg to see what it does. First I made a hop tea with 1oz of Crystal in a quart of 170ºF water. Kinda nice, but nowhere near as resounding as the last time I hop-tea'd. I heart...

    Quick n dirty temporary "kegerator"

Janky phone pic: A picture speaks better than I can except to explain: 10 gallon round Rubbermaid cooler 1x4x48" pine board with a 15/16" hole nylon tie-down strap corny, faucet, shank, etc. The 1x4 fits PERFECTLY SNUGLY through the handle of the cooler, as if they designed it that way!

I want a huge AAA - think Gordon or Undercover

My target here is in the Lagunitas Undercover (9.3%) or Oskar Blues Gordon (8.7%) range - thick with lupulin, sugars, and booze. I haven't blown out my mash tun in a really long time! Thoughts? 14lb 72.3% 2-row 4lb 20.6% Munich 6.5L 20oz 6.5% C-40 2oz 0.6% Crisp Chocolate 1oz...

    Most "floral" hops

I heart Bridgeport IPA for its delicate floral/lychee character. I WANT THAT IN MY MOUTH, so bad I'll brew a freakin' fruit beer (with canned lychees) if I have to, but I'd rather just find the right hops to focus in on that flavor and smell. Bridgeport reportedly uses Cascade, Chinook...

    Dortmunder, feat. Spalt Select

I bought a bunch of hops this past weekend, including some very pretty 4.4% leaf Spalt Select. Since I have a cake of Munich lager yeast to harvest, I thought I would put it to good use in a deliciously balanced beer. How about this (4-gallon batch): Ca 90ppm, SO4 150ppm, Cl2 60ppm, HCO3...

So many domestic "Belgian" ales are too phenolic

Having recently relocated to within a mile of Russian River BC, I'm becoming familiar with their house flavors. The not-sour Belgian styles, like Damnation, Mortification, and Benediction all have an inescapable and unpleasant phenol profile. I just opened a bomber of Stone Cali-Belgique IPA...

    Scotch Beer

Source: Henley's Twentieth Century Formulas, Recipes and Processes, 1928 I'm amazed at the assumption of prior knowledge. That, and despite the wheat beer being a batch size four times that of the Scotch beer, calls for the same volume of grain.:fro:

    Brodie sediment extractor?

Listening to the Australian Craft Brewer podcast, they talked about the Sed-Ex Brodie as a way to harvest yeast from bottles, never mind produce yeast-free bottle-conditioned beer. I had never seen or heard of anything like this: Sed-Ex Brewing, Home brewing, Home brew supplies Major limitation...

    Southampton Double White

This is a great witbier. Surprisingly, I got it from the Shell station right down the street! 6.6% ABV, so more of a wit-and-a-half, but it's really quite nice. Not as spare and spicy as a Hoegaarden, not as sweet as a Blue Moon, it has a substantial yeast-derived character like the...

Just the one photo of a nice homebrew

AHS Pale Rye, brewed December 14, racked to the keg this past Saturday the 3rd. This is my 5th batch of this recipe. It has just a luscious, meringuelike head, and it pours almost syrupy, but it's only faintly sweet. As soon as #4 has finished conditioning, I can have a side-by-side tasting...

    Hop tea gyle

On pg 160 of New Brewing Lager Beer, Noonan writes: This sounds great, right? Nice aromas and you don't have to rack it off or pull out a hop sack! And being fermentable, it can clean up acetaldehyde and diacetyl. It's Reinheitsgebot and won't dilute the beer. I totally want to do this...

Priming in a keg for bottle conditioning

I'm listening to The Brewing Network Sunday Show with Mike Mraz, talking about using a keg basically as a bottling bucket. Procedure, in a nutshell: Purge a clean, sanitized keg with CO2 Rack beer into keg Add boiled priming solution Close keg, hit with CO2 to seal Roll keg to mix Relieve...

    Homemade malta?

Anyone ever made their wort into soda? The Munich+Tett SMaSH I just put in the fermenter smelled so awesome, I wondered, can I get that into a soft drink? I recently got an insulated 34oz French press (for AG starters and tea - I only drink coffee at work), so I can do some tiny mashes. I...

Commercial beers in plastic (PET) bottles?

Never seen one before until this (while searching for info on Riwaka hops): :: Welcome to The Beer Store :: NZ's Online Beer Source :: While not as light-tight as cans, at least they're reusable and unbreakable. Are there any others?
