    I would. Never tried actual Cocoa Powder but it sounds like a real mess to deal with. I do a tincture with the nibs then can have more control over the flavor profile.

    Nibs are not always sold that way. They are available raw so you would definitely want to toast them first in that case.

    8 days fermenting and 24 hours cold crashing will result in exactly what you have there. Give the yeast a chance to clean itself up next time. 10-14 days in the fermenter would be better, but it still won't clear after 24 hours crashing even with finings. Patience is key.

    Just kegged a batch of IPA using 75% GP and it is the best one I've made to date. I mashed low so its not overly malty but I find I like the flavor profile bettern than my past batches using US 2 Row. My 2 cents.

    Not sure yet where the sour flavor is from, could just be youth. Assuming bacteria, but we'll see. I keg all my beers, but when I do brew a batch with this culture, it will sit in the corner for several months to see what develops.

    Sounds pretty normal actually. My IPA's generally exhibit similar behavior. I would stick to your fermentation/hop schedule. Take some consecutive gravity readings to see if its finished fermenting before bottling. I would skip the secondary. Not worth the oxidation/infection risk. 7-10...

    No that's called Beer gas. There are several different grades of C02. Beverage grade, medical grade, etc.
