    If you want more yeasties...they want oxygen to make babies so give them oxygen. If you want to make beer...put a plug on it. The reason for a starter is to make more babies. That's all yeast really want to do...we want to make beer. Use the foil, loose. Stir plate or intermittent stirring...

    I have a brown ale that was going to be part of a communal project into a barrel. This may no longer happen, however. The beer has been sitting in a secondary corny keg for two weeks. Is there anything I can do to produce the sour?

    Drink it FRESH! However, I do believe your IBU's are too high and your abv a little low for a Pliny. Pliny runs @ 92 IBU and the abv is 8%.

    Also, if you have the time you can do a '2-step' starter for that big beer. You can find out how on the Wyeast website. If you want an 8.5%+ beer, this will give you the vital amount of cells ready to eat the sugar instead of just trying to multiply. Your lag time will also be a lot quicker...

    why, yes babalu87, I have tasted one...or two even. I didn't say I conquered anything. I brew my Black Moria Double Black IPA which has even been approved tasting-wise by pro brewers. Also baba, what is real? Lighten up.

    I have recently, for my 2IPA's, gone with the 1:1 ratio of H2O to grain. No stuck sparge either and a pretty decent efficiency with a OG: 1.088 and FG: 1.016...Now that makes a lively beer!

    I just brewed last evening something very similar to yours. I could only obtain Carafa I but the color was pretty pitch-black when finished. My hops were Chinook, Centennial, Amarillo. Used Chico Ale yeast, pitched from a starter. Started fermentation 3 hrs later! Called it Black Moriah.
