    Opened a 2009 Brunello

The next to the last one I have. It's fantastic. Wish I would have saved 15 bottles!

    Topping off wine kits...

Straight from the kit makers keyboard to your eyes. http://www.timswineblog.com/2012/01/water-into-wine-kits Interesting...looks like wine as a top-off for kits isn't really necessary, just plain old water. Also, the racking issue discussed at the end is also an eye opener for me!

Sad day at Two Cats Winery...

Today is bottling day for my WE limited Edition Primitivo. Everything was set up, bottles washed, corks soaking, wine moved to bucket. Doorbell rings, neighborhood kids have found one of the two cats dead in the woods behind my house. Timmy was caught by a pack of wild dogs that have...

    Concentrate question

Has anyone ever made a wine based on a concentrate form Home Winery Supplies? (http://www.homewinery.com/cgi-bin/concen.cgi) I started 2 5 gallon batches, one of Merlot and one of Chianti. Both have started fermenting and look to be fairly "thick" at this stage. SG was 1.10 for the chianti...

    Bottled the RQ Cab Franc/Merlot

At 60 days, I decided to bottle my RQ Cab Franc/Merlot. Looks like ink it is that dark. Even this young, it tastes great, in fact, I used a half-bottle of Gnarly Head Old Vine Syrah as the overflow bottle for my bottling device. It ended up about 3" of new wine on top of the other. I didn't...

    First Filter Attempt

Hope I can attach the pictures. I used a plate style filter in combination with my Winegasgetter to suck the wine through the filter instead of pressure pushing the wine through. I didn't have any problems and didn't spill a drop. I've read many accounts of these style of filters...

    RJS RQ kits

I lucked out and found a RJ Spagnols RQ Cab Franc/Merlot kit for half price at a local BOP winery. I started it 2 weeks ago and yesterday was the first testing day. The OG was 1.096 and at 14 days it had dropped to .993. I used a brew belt to keep it warm for all of the 14 days. The grape...

Sur lei with a peach wine?

My peach wine is just about ready to move from primary to secondary. ( days and it has started to clear a bit, I will check SG tomorrow, but I think it is ready to move. I have punched it every day to get lots of O2 into it and press out any more juice thats in the bag. My question is about...

    Kinda Cool...

Last year, I bought a gallon of unpasturized apple cider from a farm in Zirconia,NC (Maybe Flat Rock, NC) after the Hendersonville Apple festival. I have been stopping there for the past 5 years to buy apples and the owners have always been very nice to me. Anyway, today I took a bottle of 2...

    Mojito Wine Finished!!!

WOW...way too good. Finished the Twisted Mist kit this weekend. ABV tested to 14% (1.095 to .985). Cleared to crystal in 10 days after a really good degassing. Added the F pack of flavoring and bottled. Ended up at exactly 30 bottles. Reserved one for myself. After cleaning up all of...

    Racking with WineGasGetter

I just finished racking my Mojito wine from the primary to the secondary by using my WineGasGetter device. No touching or disturbing the wine, the vaccum just pulls it right into the carboy. Takes about 1/3 the time as siphoning. Now I need to buy a second carboy for the next...

    Winegasgetter

Anyone ever tried this CO2 removing device? My wife bought me one for Christmas and it seemed to work perfectly. No labor involved. An air compressor is attached at 65 psi and the vacuum generator easily sucks the CO2 off of the carboy. The inventor was at a wine contest last fall and I...

    Better Bottle Issue

I went to a local winery/home brew supply store yesterday. Needed the usual supplies, corks, new bucket of cleaning soap, shrink caps, test jar for the one I lost. I asked if he had a bottling bucket with a spout. He only had a slightly used 5 gallon Better Bottle with a spout that he would...

    Opened a Brunello...

I bottled a Brunello in April and my wife suggested we open one with our Italian dinner last night to see how it was doing. It is a little thin, too bright to be a Brunello, but those qualities will improve with another 9 months in the bottle, I assume. The color and clarity are outstanding...

    Barrel tasting

Went to Livermore, CA last week and stopped at a small (100% organic) winery for a tasting. They were not very busy so they asked if we would like to do some barrel tasting of their 2008 wines. Interesting, to say the least! The wine was great, and will only get better as it ages in the...

    Bottled the Brunello!!!!

Got 30 bottles plus 2 glasses. Added 3 crushed campden tabs and poured into the Brunello an hour before bottling. Put 30 One-Step cleaned bottles into the new dishwasher and used the "Sanitize" setting. The bottles were way too hot to touch after that! I let them cool off and sterlilzed...

    Bottle type question...

A friend of mine won a brewing contest and his prize was a box of 12 one liter brown EZ-lok bottles. He doesn't want to put his beer in bottles that big, so he gave them to me if I could use them for wine. Any experience with this type of bottle for wine? They are the wire snap-lock type...

    Threaded wine bottles

Is it safe to use a threaded used wine bottle with a new cork? The threaded area looks a bit thin, but only at the threads, the cork applies pressure over most of its length. The bottle is a CK Mondavi Zin, and I didn't expect a screw top!
