    The batch is either infected or not infected. There is no partial infection, unless it;s in the bottles. With that said your bottles are either clean or dirty. If it's the latter then, you could have some infected bottles and some non infected bottles.

    You don't need to mash for more than an hour. I'll guess you are using fully modified malts for this base malts of this beer. (You have to go out of your way to find unde-rmodified malts). 2% flaked barley should be adequate for you.

    I step up my starters with the flask. Keeping the original yeast starter in the flask and then adding additional wort over the course of a few days. This becomes especially Indispensable when ramping up lager starters.
