Belgian strong ale stronger than expected...

Hi everyone, long time no see. I recently did my first all-grain batch, a belgian strong ale, and it was a tremendous success. In fact, a bit too much so. We got an original gravity of 1.103, and it fermented down to 1.021 after two weeks in primary (perhaps longer than necessary, but since...

    The brewoff...

I haven't been on in a while (I need to change my signature so it doesn't say this hasn't happened yet), but the brewoff was a huge, huge success. We brewed at my friend's house, and he has two kitchens. A lot of time was spent running back and forth from the two kitchens trying to spy on the...

    Grandpa's woodshed apple smoked porter

I posted a thread recently about my first bad beer, but I wanted to post something about a truly fantastic beer I brewed. I would encourage people to try something like it. I smoked three pounds of base malt with apple wood chips and mashed it with some aromatic and some black patent, a little...

    First bad beer

Thanks for the input. We used actual chocolate, and some chocolate malt, but not a ton of either. I think we used 10 oz. of unsweetened chocolate, and maybe 4 oz. of chocolate malt. We sanitize with iodophor and don't use a ton of that either. We also brew with distilled water and gypsum and...

    First bad beer

Well, it finally happened. We brewed a bad beer. Some have been not so great, but this one is bad. It was supposed to be a chocolate porter, and we did it pretty much the same as the ginger chocolate porter, but without the ginger and with more chocolate. The first problem is that we got a...

    Flip top bottles-can you reseal?

I couldn't really figure out how to title this thread, but if you have flip-top bottles, Grolsch style, and you open a beer, but then recap it, how long will it stay good? My instinct says not long, but I can't think why not.

    Currently drinking...

I'm drinking a homebrew. Humble Pie Imperial Stout. It's gotten really good now.

How long can the beer stay safely in the secondary?

I don't think you can harm a beer by leaving it in secondary too long. It just clears out better. The yeast will stop working when it runs out of food and will slowly settle to the bottom, but I think you'd have to leave it a long, long time before it all settled out, if it ever does. I had a...

    Favorite actor and actress?

Johnny Depp--Even when he does a bad movie he does it HIS way. Never the same performance twice. Meryl Streep--An obvious choice, but extremely talented nonetheless.

    New waste of time game...

1187 after about 12 tries. This is fun! I'm gonna do it again.

Homebrew hangovers worse than with BMC?

I've never had a hangover from HB, but it's because I've never gotten drunk off of it alone. One night though I had three Humble Pie Imperial Stouts (7.5% ABV) and two Seamus's (3.5% ABV) before breaking into my Sierra Bigfoot Ale, of which I had three. I didn't have a hangover the next...

    Questions to Ponder

Chuck Norris doesn't go hunting, because hunting implies the possiblity of failure. Chuck Norris goes killing.

    Cheap all-grain equipment

Ok, so we've decided to go all grain. I know we'll need some kind of propane burner, a large pot, possibly with the capacity to lauter as well as mash, and a wort chiller. I've read a lot about homemade wort chillers and I'm pretty sure I can figure that part out, but how much should I...

    Orange Blossem Special

Ferret, I've got a heavy schedule of brews ahead of me, but I think I might brew this sometime in next winter to have it ready for spring. I know it sounds ridiculous, but I actually have brew plans for most of the rest of the year. However, if you still have some when mine are ready, I'll...

    Orange Blossem Special

The more I think about this recipe the more I like it. I may have to try a version of it. That is if you don't mind, autoferret. But I second what Dude said about the corriander. As far as the shaved orange peel, when do you add that? I wonder if it's something that would be best added to...

    Stereograms are cool

I always see them inside out. It's cause I cross I my eyes instead of looking through it, but I can't do it that way. Especially on a computer screen. But I liked them back in the nineties when they were everywhere. Remember mallrats? "I wanna see the sailboat!"

    Questions to Ponder

I hear atheists call out to Chuck Norris. I don't know if you guys have seen the chuck norris facts website (I don't actually know the url), but it's effin' hilarious. Chuck Norris once ordered a Big Mac at Burger King... And got one. Chuck Norris once ate three 96 ounce steaks in an...

    Pellets vs. Whole Leaf

One thing that I've noticed that I don't like about pellets is that they jam up my strainer. The little tiny bits of shredded hops get into the little tiny holes, and it takes forever to strain it through. I've never done a 100% whole hop batch, so maybe they're not that much easier to use...

    Orange Blossem Special

When I hear that whistle blowin' I hang my head and cry... Sounds good. If you're looking to steep grains, I'd suggest maybe honey malt, available from Northern Brewer. I've never used it, but I was thinking of using it in my barleywine, which will have some honey in it as well. The honey...
