Opinions/Experience with Omega yeast in general? And as substitute for Wyeast 1335?

My lhbs sticks mainly Omega, so I’m getting to know their products pretty well. I have had nothing but good experiences with all the strains I’ve used- Bananza, West Coast Ale I & II, the Irish and Scottish ale strains, and British I. I haven’t used British VI yet, but every fermentation takes...

    Anvil Foundry Mash Eff

This has been a very interesting thread to go through. I’ve done 9 batches now on my Anvil, and I’m trying to increase my efficiency as well. My first step was to double grind 1/2 my grist. This helped me go from high-50’s to high-60’s. I’ve also seen a YouTube video suggesting lifting the malt...

    Temp dropped

And, these are the same people that say you don't need a starter, so I guess I should really take their recommendations with a grain of salt.

    Temp dropped

Gotcha. White Labs site said their recommend fermentation range was 68-72F, so that's what I was shooting for. I'll lose those blankets as soon as I get home.

    Temp dropped

Okay, thanks for talking me down. I'm new, but I've read enough to know better about the airlock as an "indication" of fermentation. I wrapped the bucket in a couple blankets last night, and it's back up to 66F. I plan on checking once I'm home from work. I'll lose the blankets and let it do its...

    Temp dropped

I just brewed a pale ale yesterday, got it in the fermenter and down into the basement to do its thing. Used a 2000ml starter with WLP001 yeast. As of last night, temp read 68 degrees, and the airlock was bubbling away just as happy as could be. I checked on it this evening, and temp was down to...

Spice, Herb, or Vegetable Beer McAustin's Mocha Stout (w/cold-brewed coffee)

Quick question - how would I back down the bitterness on this recipe? My wife wants a chocolate-coffee stout, and this looks like just the thing, but she doesn't want it too bitter. She's not a big beer drinker, and definitely not a hop head, but she tried a brew something like this at a brewery...

Priming Sugar Question (2.5 gallon batch)?

Yes. As a new brewer, I see all sorts of information about how much sugar to use, but I haven't seen anything about how much water. Kind of got me confused here.

    Cold Crashing????

As far as temperature goes, could I put my brew out on the back porch? Temps are getting in the 20's & 30's. Is this too cold?
