    I'm experiencing the same problem. Except I made a starter with my yeast and it was chugging right along until I pitched. Now three days later and... nothing. The must is starting to smell very sweet too, with a distinct honey aroma.

    The only mead I've made multiple times now is a dry show mead with clover honey. It turns out so nice each time with a sweet flavor of pears and other fruit. My friends like it a bunch.

    I'd say you're okay. My meads have looked like that, and come to think of it, most of my ciders too. Just a slight "krausen" sort of thing made up of suspended yeast, Co2, and maybe some solids or proteins from the honey.

    Oaking Cider?

    I did this once with medium toast chips. I don't recall how long I oaked for, (in secondary), but it turned out very oaky. To the point where it was almost undrinkable. I don't think I would do it again unless I had some hard numbers on the amount of oak to use and the amount of time.
