    @ Keith It should be dry as hell. If you don't like that, you can do what's called 'backsweetening'. There is a ton of info on that in the cider forum. Traditional Apfelwein is meant to be dry, though.

    The apocalypse. Seriously, I'm pretty sure nothing bad can happen by over-pitching the yeast. If you've added enough additional liquid I guess at some point you've watered down your cider. It shouldn't even hurt your yeast cake.
