    Wealthy apple for Cider?

Does anyone know which category of cider apples the wealthy apple falls under? My FIL just bought a wealthy apple tree to plant up at our cottage. I'm wondering how it will turn out. It's a cross with half coming from a siberian crab. Good up to zone 2, and our place is on the edge between...

What not to do to heat your ferm chamber.

Don't use a hair dryer as your ferm chamber heat source without making sure that you've got plenty of air flow. Or you get this.

    Metabisulphite in priming solution?

Basic googling didn't turn up an answer. I use campden tablets when I'm brewing. But the other day it occured to me that I'm also using boiled tap water for my priming solution on bottling day. Obviously, using a campden tablet wouldn't be practical here. But is anyone using sodium...

    Wild yeast for cider attempt

Well, it's not the normal cider from wild yeast where you get your yeast from the apples or the press. I just plucked a raspberry out of the backyard in this cool fall weather. And I've tossed it on my stirplate with about 100ml of apple juice. We'll have to see if anything comes of it. The...

    Restocked on ec1118

I picked up some more yeast today to keep some in inventory. At 65 cents per packet I picked up four, and maybe should have gotten more. At that price I'm not ever going to bother harvesting that strain other than to pitch onto a yeast cake from a previous batch.

Very happy with my contest results

I recently submitted to a small competition and submitted 4 ciders. Out of a total of 13 cider entries I got two gold, one silver. And my two golds placed first and second best of show. Now I need to wait and see what my scores actually were. My standard cider took gold out of 4 entries in...

    Gambrinus Vienna vs Weyermann Vienna

Does anyone have any experience comparing Gambrinus Vienna with Weyermann Vienna or another German Vienna malt? just looking at the Lov ratings there's a largish difference. With Gambrinus being 5.0-6.0 Lov and Weyermann being 2.8 - 3.9. I'm wondering what other differences there may be.

How much trub do you get?

I'm trying to get an idea of how much trub is normal, and I realize that it ranges. Can some folks tell me what they're brewing style is, and tell me how much trub is left behind at the end of fermentation? I'm looking for volumetric calculations of trub relative to fermenter volume. For...

Brew pal timers not working on iPhone 5s

I recently switched to a new phone. And it seems that brew pal isn't setup to allow notifications. So all my brew day timers just come and go without so much as a peep. Anyone else seen this? Or better yet, have a fix?

    Force carbing via natural carbonation

Could you take 2 kegs attached to a manifold with no back check valve, one file with flat beer and the other filled with water and a double dose of priming sugar and conditioning yeast, and have it "naturally" carb your other beer without using a co2 tank? Just a thought

    Why did I do this?

I built a stir plate, because I could do it for free because I had the parts on hand including a variable voltage powersupply(3-12v). I have no stir bar, and have not had any desire to make starters, and don't stock dme. Why did I do this?

    Priming sugar for bottled lagers

When bottling a lager do I input the drest temp or my lagering temp when calculating priming sugar. Or should I just ramp it back up to my drest temp before bottling day to eliminate that problem?

Itc 1000 not broken, just delayed

I just finished building my temp controller, and I'm pretty happy with it right now. But I just spent a lot of time fighting with it. Power wasn't coming out the damn outlets and I couldn't figure out why. I was seeing 6 volts or so on the outlets and it was maddening. Now I know that I just...

    Made my own brew bag

So I finally got around to making my own brew in a bag bag. I had made some hop socks but wasn't really happy with the seams and how they looked. So I too my measurements and after finding a post from wilser about how to sew over the seams twice after the initial stitch, I now have a bag that I...
