I have to wait 28 hours to pitch the yeast. Will my beer be OK?

I just racked my wort (Porter) to fermenter and I realize I have no yeast. Nada. The soonest I can get yeast is tomorrow and it will be 28 hours till I can finally pitch the yeast. Although the fermenter will be kept at ~70f I'm worried my beer will be ruined. What do you guys think?

My emergency yeast starter worked great.

I got a chance to brew yesterday but I had no yeast to pitch. Then I realized that I have LOTS of yeast at the bottom of my cold bottled beers so I drank 4 beers during my brew day and saved the dregs. When my wort had boiled a while I drew off 2 qts of it, I cooled it in an icebath and then I...

Mixing Starsan by the gallon using digtal scale. Does this sound right?

I want to mix Starsan one gallon at a time. The directions say 1oz per 5 gals so if I put my 1 gal jug on the digiscale and add 6 grams of Starsan and then fill to the top with distilled water, will that give me the proper dilution?

I forgot to starsan. Fatal mistake?

I just racked my latest beer to secondary but I failed to sanitize the Better Bottle vessel with Starsan. Oh, I cleaned it well with oxyclean and rinsed with warm water 3 times but I failed to swirl some Starsan into the carboy before racking. Do you think I made a fatal mistake or do you think...

I like my new Speidel fermenters a lot except for....

I recently bought two 7.9 gal Speidel fermenters and like them very much mostly because I never have to deal with messy blowoff again and in fact I can now make 6 gal batches and still not have any blowoff. Plus they are very easy to clean compared the 6.5g Better Bottles I had been using. The...

I brewed with Citra for the first time and was amazed at the result

Until now I have been unsuccessful at making an ale with huge hop flavor and aroma but I was finally successful with my latest Citra ale Hop Bomb. This Pale Ale screams with citrusy hop flavor. I am so happy I finally made an ale with mega hop flavor I've been trying for. The bitterness is...

The holiday season has begun. Celebration ale is here.

It's only the 23rd of October and I just found the new 2013 Sierra Nevada Celebration Ale at my local liquor store. I'm sipping my first one now and the label says that it's made with the first fresh hops of the current season so it's super super fresh. I remember when I didn't like SNCA and...

Brand new Sierra Nevada Flipside red IPA

I just picked up a sixer of the new Sierra Nevada Flipside red IPA and I have to tell you guys that it is the best beer I've tried in recent months. If Flipside is a replacement for SN's Tumbler autumn beer I am happy cuz it's a lot better than their Tumbler ale aand better than Torpedo or...

My visit to Mammoth Brewing Co and my new T shirt

I was in Mammoth Lakes this last weekend and I stopped by Mammoth Brewing Co at nearly 8000ft elevation in the Eastern Sierra and I was treated to an impromptu tour of the brewery. A friendly brewer named Dustin showed me around the brewery and I learned a lot as we shared thoughts about the art...

I'm so bummed that Sierra Nevada changed their 12pk packaging

I have been using Sierra Nevada 12 pk bottles and boxes to store my homebrew for years now but they have recently changed their 12 pks to a cheaper packaging that is not nearly as reusable for me. Sigh.

Which one should I pitch? Three choices.

I'm brewing a West Coast style IPA today. The OG will be ~ 1.070. I have three choices for yeast. #1. 12oz bottle of slurry that I bottled and capped when I bottled my last batch of Pale Ale which was ~ !.050 using WLP 001. It has been in the fridge for two weeks now. #2 A fresh vial of WLP...

Something magical happens with 1 month + of cold bottle aging

I love it when I discover a bottle of my homebrew that has been cold aging for several weeks in the fridge. So clear now and so fine now. If only there were more of them.

Four pounds of PNW hops per barrel?? What's that in homebrewing terms?

One of the most hop flavored beers I know of is I know of is Firestone's Union Jack which claims to use 4 lbs of PNW hops per bbl. How much hops would that translate to for a 5 gallon homebrew batch?

Would mountain stream water make good beer?

I have always made beer with my tap water which comes from a well. I've never had it analysed but it makes good beer. I've been thinking about brewing with some stream water from high up in my local mountains which of course is snowmelt. I know that the stream water will be soft compared to the...
