    Sounds about right, rise temp to 21C/70F for 2/3 days in order for yeast to finish cleaning-up and you're pretty much done

    This Accuflex Bev-Seal tubing is great but it's quite rigid and does not offer the same resistance / ft as regular tubing, so I run 15ft / tap to not get foam. It is kind of a pain when I need to switch kegs around, but I manage :-)

    Looks pretty good to me, what OG are your targeting ? I would move honey to last minute and probably mash a bit higher (depending on OG, but 151/152). Also, I like 3711 but I have gotten higher alcohol when fermenting too warm, I would start around 18C and let rise to 20C/21C but not more. Let...

    Harvested yeast smells rubbery

    I harvested 2 qt of WLP002 a couple weeks ago and made myself the same remark, smells like rubber... I have reused the yeast with great success so I do not worry about that anymore...

    Mash Temp Advice - Big 1135 Imperial Stout

    IMO and what I would do myself is a 150 step for 60 min, 156 for 15 min, mash out for 15. Grain bill has a lot of crystal type grain, mash too high and you will be drinking soda style beer. My 2 cents !

    With both C60 and Special B, it might end up a bit sweet, especially from extract. You can drop the C60 and get a nice colored beer only from Special B. I like the idea of mixing all of this together, think out of the box, style guidelines are... guidelines ! Back in the days, farmhouse ales...

    I understand your point and it does make sense. But... I believe a brewer can learn a lot about what is going on during fermentation by looking, smelling, tasting beer as it goes. I like to do that, it is part of the brewing experience and I definitely understand other people wanting to do so...

    You would take samples from the top valve. Make sure you sanitize before and after taking the sample. You might be pulling trub/yeast from the valve, I would recommend waiting to have dump the majority of the yeast from the dump valve (bottom) before taking sample from the upper one. You should...
